1 cup heavy cream
salt and pepper to taste
1 lemon, juiced
2 tablespoons chopped Italian parsley, divided

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until tender yet firm to the bite, about 10 minutes or 1 minute less than directed on the package.

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs.

8 ounces spaghetti (about 1/2 pkg.)
6 -8 cups water
1 teaspoon salt
1 cup frozen bay scallop
1/2 cup frozen baby peas
1/2 cup frozen corn
3 stalks celery, diced
1/4 small white onion, diced
1/4 cup sour cream
1/4 cup mayonnaise
1/4 cup parmesan cheese, grated
1/4 teaspoon dill weed
fresh ground pepper

Steps:

  • Add salt to water and bring to boil.
  • Break pasta in half and add to water. Stir immediately and boil for 12 minute (or refer to package directions.).

Zest and juice of 1 lemon
1 garlic clove, finely grated
1 lb. summer squash and/or zucchini, halved lengthwise, thinly sliced crosswise
½ cup coarsely chopped pickled banana peppers
3 Tbsp. red wine vinegar
1¾ tsp. Diamond Crystal or 1¼ tsp. Morton kosher salt, plus more
1 tsp. freshly ground black pepper, plus more
1 lb. orecchiette or other small pasta
2 pints cherry tomatoes, halved
1 cup halved pitted Kalamata olives
½ cup finely grated Parmesan, plus more for serving
⅓ cup extra-virgin olive oil
8 oz. fresh mozzarella, torn into small pieces
1 cup (packed) coarsely chopped basil, plus more for serving
½ cup finely chopped oregano, plus more for serving

Steps:

  • Toss 1 medium red onion, thinly sliced, zest and juice of 1 lemon, 1 garlic clove, finely grated, 1 lb. summer squash and/or zucchini, halved lengthwise, thinly sliced crosswise, ½ cup coarsely chopped banana peppers, 3 Tbsp. red wine vinegar, 1¾ tsp.   • Add pasta, 2 pints cherry tomatoes, halved, 1 cup halved pitted Kalamata olives, ½ cup finely grated Parmesan, and ⅓ cup extra-virgin olive oil to vegetable mixture; toss well to combine. Add 8 oz. fresh mozzarella, torn into small pieces, 1 cup (packed) coarsely chopped basil, and ½ cup finely chopped oregano and toss gently just to incorporate. Taste pasta salad and season with more salt and pepper if needed.
  • Just before serving, top pasta salad with more Parmesan, basil, and oregano. Do ahead: Pasta salad (without toppings) can be made 5 hours ahead. Cover and chill.

2 tablespoons chopped fresh flat-leaf parsley, plus more for garnish

  • Bring a large stockpot of water to a boil, and add salt generously. Add pasta; cook until al dente according to package instructions. Drain in a colander, reserving 1/4 cup cooking water.
  • Heat the oil in a large saute pan over medium-high heat. Add garlic and red-pepper flakes; toast until lightly golden and fragrant, about 1 minute. Transfer garlic to a small bowl; set aside
  • Add scallops to pan (if using sea scallops, cut in half); saute until opaque, about 2 minutes. Add the tomatoes, and cook, stirring frequently, until the skins begin to split, 2 to 3 minutes; crush a few with the back of the spoon. Season with salt and pepper. Remove from heat.

1 large onion, halved and thinly sliced
Vegetable oil, for frying
Coarse salt and freshly ground pepper
All-purpose flour, for dredging
2 tablespoons canola oil
48 bay scallops, preferably Nantucket
3 tablespoons dry white wine
1 tablespoon unsalted butter
2 tablespoons Homemade Chicken Stock
4 cups mixed salad greens
3 tablespoons extra-virgin olive oil
1 teaspoon red-wine vinegar

Steps:

  • Fill a medium bowl with ice and water. Add onions, and soak until ready to fry. Drain well, and pat dry. Heat 2 inches oil in a medium saucepan to 400 degrees. Add onion, and fry until golden brown and crisp, about 1 minute. Transfer to paper towels to drain. Sprinkle with salt; set aside.
  • Place flour in a shallow dish. Heat canola oil in a large nonstick saute pan over high heat. Dredge scallops in flour, shaking off any excess. Add scallops to pan, and cook until just golden, about 30 seconds per side. Pour out excess oil. Add wine, butter, stock, salt, and pepper. Cook for 30 seconds, and remove scallops to a platter; keep warm. Simmer sauce until reduced slightly, about 30 seconds.
  • Place greens in a medium bowl. Drizzle with olive oil and vinegar. Season with salt and pepper. Toss to combine.
  • Divide greens between two plates. Drizzle reduced sauce around the perimeter of each plate. Arrange scallops around greens. Top with fried onions.
