1 slice day-old whole-grain peasant bread
2 1/2 tablespoons extra virgin olive oil
4 garlic cloves, thinly sliced
1 1/2 tablespoons finely chopped walnuts
1/4 cup chopped fresh flat-leaf parsley (Italian)
1 teaspoon salt
1 small yellow squash, cut into 2 inch (5-cm)
1 small zucchini, cut into 2 inch (courgette)
1 cup shredded carrot
1 small red bell pepper, cut into julienne (capsicum)
1/4 cup diced yellow bell pepper (capsicum)
1/2 teaspoon fresh ground pepper
1/2 lb whole wheat spaghetti (wholemeal)

Steps:

  • In a blender or food processor, process the bread to make fine crumbs.
  • In a large nonstick frying pan, heat 1 1/2 teaspoon olive oil over medium heat. Add the sliced garlic and sauté until lightly golden, about 1 minute. Stir in the bread crumbs and cook until lightly browned and crunchy, 3-4 minutes.

1 (4 pound) spaghetti squash, halved lengthwise and seeded
1 tablespoon extra-virgin olive oil, or as needed
sea salt and freshly ground black pepper to taste
1 medium zucchini, roughly chopped
½ medium onion, roughly chopped
½ medium red bell pepper, roughly chopped
2 cloves garlic
½ medium yam, peeled and chopped
½ cup chopped carrots
2 pounds lean ground turkey
1 cup almond meal
2 large eggs
½ teaspoon sea salt
freshly ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Cover two baking pans with aluminum foil.
  • Place squash, cut-sides up, on one prepared baking sheet. Brush the insides lightly with olive oil and season with salt and pepper. Let the oil soak in for about 2 minutes, then flip so cut-sides are down.

  • In a large pot of boiling salted water, cook pasta according to package instructions. Reserve 1/2 cup pasta water, then drain.

  • Heat oven to 500°F (260°C).
  • Spiralize the yellow squash and zucchinis into a large bowl.
