- For the meatballs, Put the minced meat in a bowl with the onion, garlic, parsley and breadcrumbs. Mix with your hands until well combined, add the beaten egg and mix until well combined. Shape the mixture into small meatballs.
- Sprinkle some plain flour onto a plate, and roll the meatballs in the flour to coat lightly.
- Heat one tablespoon of the olive oil in a frying pan and add a few meatballs to the pan. Fry gently, turning frequently, until golden-brown on all sides. Remove from the pan and set aside to drain on kitchen paper. Repeat with the remaining meatballs, cooking them in batches until they are all cooked. Top up the oil as needed during the cooking process.
- Once the meatballs are cooked, make the sauce. In the same pan as the meatballs were cooked in, fry the carrots, onions and garlic over a medium heat until the onions are soft and lightly coloured. Add the parsley, paprika and saffron, and pour in 300ml/½pt water. Bring to the boil, simmer for 2-3 minutes to thicken, season with salt to taste, and then add the meatballs to the pan. Simmer for 10 minutes to warm through before serving.

- In a large bowl, mix together all meatball ingredients EXCEPT flour.
- Roll mixture into 2" balls.
- Roll each ball in the flour.
- Lightly oil a skillet with olive oil and fry the meatballs on med.- high heat until golden brown.
- Put meatballs in a large saucepan and set aside.
- In the same skillet you fried the meatballs in, add the onions and peppers and cook until tender.
- Add the tomatoes and cook another 8-10 minutes or until tomatoes are the consistency you like.
- Add the wine and cook about 3 more minutes.
- Salt and pepper to taste.
- Pour sauce mixture onto meatballs and let simmer on low about 10 minutes.
- Best served on rice or rice-a-roni.
- *NOTE* If you like a sweeter sauce, try mixing 3 Tbsp grape jelly with the wine before adding it to the sauce.

- MEATBALLS:.
- Place bread in a bowl and add water. Let soak for 5 minutes. Using your hands, squeeze out the water and return the bread to the dried bowl. Add pork, onion, garlic, parsley and egg. Season with nutmeg, salt and pepper. Knead the ingredients well to form a smooth mix.
- Spread flour on a plate and with floured hands, shape the mixture into 30 balls, then roll each again in flour until coated.
- Heat the olive oil in a large, heavy-bottom skillet. Add meatballs and cook for 4-5 minutes or until browned on all sides. Remove meatballs and reserve.
- MAKE SAUCE:.
- Heat oil in same skillet in which the meatballs were fried. Break the bread into pieces, then add to the skillet with the almonds and cool gently until the bread and almonds are golden brown. Add the garlic and fry for an additional 30 seconds. Pour in the wine and boil for 1-2 minutes. Season to taste. Cool.
- Transfer the almond mixture to a food processor. Pour in the vegetable stock and process the mixture until smooth. Return to skillet.
- Add meatballs and simmer 25 minutes or until tender. Taste and season if necessary.
- transfer all to serving dish. Add a squeeze of lemon juice and sprinkle with parsley to garnish. Serve piping hot with crusty bread for mopping up the almond sauce.

- Trim crusts and soak bread in milk.
- Mix bread, crushed garlic, freshly grated nutmeg, finely minced parsley egg, and salt and pepper
- Add ground beef.

- Mix the ground beef with the egg and half of the chopped onion. Season with one stock cube and black pepper.
- Pour olive oil into a large pot and heat. Roll the meat mixture into the size of ping pong balls and add them to the oil. Fry until almost done then add the rest of the onion and fry together for another couple of minutes.

- Sauté bacon until crisp in a large frying pan; remove and drain on paper towels.
- Mix ground beef lightly with egg, breadcrumbs, and 1 teaspoon salt until well blended; shape into 16 small balls.

- For the meatballs:.
- In a bowl, combine pork, bread crumbs, eggs, parsley, garlic, pine nuts, salt, pepper and cinnamon. Form into 1-inch balls.
- In a large skillet, heat oil over medium heat. Working in batches to avoid crowding, saute the meatballs until well-browned and cooked through, about five minutes. Transfer to paper towels to drain.
- For the sauce:.
- Heat olive oil in a skillet over medium heat. Fry the slice of bread on both sides until golden (about 1 minute).
- In a food processor, finely chop the bread, almonds, pepper flakes and garlic. Add the pimientos, tomatoes, paprika, salt and pepper. Process to a smooth paste. Add the vinegar and process to combine. With the machine running, gradually add the oil in a thin stream to emusify the sauce.
- Transfer meatballs to a serving plate and serve with Romesco sauce.
SLOW SIMMERED SPANISH MEATBALLS WITH GREEN OLIVES
Steps:
- Prepare the saffron water: Toast the saffron strands in a warm skillet over low heat for 1 minute. Crumble the toasted saffron strands into the 1/4 cup hot water and set aside. Prepare the meatballs: Combine the potato, onion, red bell pepper, parsley in a food processor and process until very finely chopped, but not yet a paste. In a separate bowl, combine the vegetable mixture with the ground beef or lamb, cumin, egg, and season with salt and pepper to taste. Refrigerate the meat mixture for at least 30 minutes or until ready to cook. Shape the meat mixture into meatballs, approximately 2 inches in diameter and set aside. The mixture should yield 12-16 meatballs. Prepare the sauce: Place an 12-inch deep skillet (with lid) or dutch oven over medium-low heat. Add the grated onion, garlic, olive oil, saffron water, paprika, salt, 3/4 cup of the parsley and hot water. Bring to a boil then reduce the heat to medium-low, cover, and simmer gently for about 7-10 minutes. Add the meatballs one by one, to poach in the sauce and continue to cook, covered, for 15 mins, gently shaking the pan to ensure even cooking. Add the green olives and continue cooking, covered, for 20-30 minutes longer until all the flavors are deep and melded together. Add the lemon juice and adjust the seasoning with salt and black pepper. Garnish with the remaining 1/4 cup parsley and serve piping hot straight from the pan. This recipe is wonderful spooned over rice or accompanied by rustic, crusty bread to soak up the sauce.
SPANISH MEATBALLS

- Preheat the oven to 350 degrees F. In a large bowl, mix together the pork, veal, beef, grated onion, chopped garlic, 1 tablespoon parsley, cilantro, cumin, chile powder, and 1/4 teaspoon crushed red pepper, 1 tablespoon salt, and the black pepper. Add the egg and combine. Add the bread crumbs and boquerones, if desired and combine. Begin to form meatballs, each about a generous 1/4 cup of the mixture per meatball. Cook's Note: you should have about 20 meatballs. Set aside on a plate. Heat a 12-inch saute pan over medium high heat. Add 2 tablespoons of the olive oil and add meatballs to the pan. Brown the meatballs on all sides, in batches if necessary and turning gently as needed, until nicely browned, but not fully cooked. Remove from the pan and set aside. In the same pan, add the remaining 2 tablespoons olive oil, the smashed garlic cloves, and the red onion and toss to combine, cook for 1 minute. Whisk in the flour until it combines with the oil to make a roux and cook for 2 minutes longer. Whisk in the chicken broth, then remaining tablespoon of parsley, the remaining teaspoon of salt, the remaining 1/4 teaspoon crushed red pepper, and the pimenton. Once the liquid comes to a boil it will begin to thicken. Whisk in more broth to reach the desired consistency. It should be the consistency of a thin gravy. Return the meatballs and their juices to the pan. Baste the meatballs with the sauce and place the pan into the oven. Continue to cook the meatballs, uncovered, for 20 to 25 minutes. Remove the pan from the oven and transfer the meatballs and sauce to a serving bowl. Garnish with chopped parsley.

- 1. Place the meat in a large bowl along with the remaining ingredients. Combine.
- 2. Cover bowl and chill the meatball mixture at least 30 minutes. Chilling the meat makes it easier to form into balls.
- 3. Preheat oven to 350 degrees. Use an oiled small cookie dough scoop and arrange meatballs on a parchment-lined baking sheet.
