GREEN BEANS WITH GARLIC AND HAM
We always had these beans with our Christmas dinner. They are very flavorful and a family favorite. Most of the work can be done in advance. Although there is alot of garlic, the cooking process mellows it considerably.

Tips:
- Choose the right speck: Look for speck that is dry-cured and has a deep red color. Avoid speck that is too moist or has a slimy texture.
- Soak the beans: Soaking the beans overnight will help to reduce the cooking time. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 1 minute, then removing them from the heat and letting them sit for 1 hour.
- Cook the speck and beans separately: This will help to prevent the beans from becoming overcooked.
- Use a flavorful broth: The broth you use to cook the beans will add a lot of flavor to the dish. Use a broth that is made with real bones and vegetables, and avoid using bouillon cubes or canned broth.
- Add the speck and beans to the broth at the end of cooking: This will help to prevent the speck from becoming tough.
- Season the dish to taste: Add salt, pepper, and other spices to taste. You may also want to add a squeeze of lemon juice or a dollop of sour cream.
Conclusion:
Speck und Bohnen is a hearty and flavorful dish that is perfect for a cold winter day. The combination of smoky speck, tender beans, and flavorful broth is sure to warm you up. This dish is also relatively easy to make, and it can be tailored to your own taste preferences. So next time you're looking for a comforting and delicious meal, give Speck und Bohnen a try.
