1 small onion, finely chopped
1-1/3 cups soft bread crumbs
2/3 cup grated Parmesan cheese

2 pounds ground beef

Steps:

  • Preheat oven to 375°. In a large bowl, combine eggs, water, onion, bread crumbs, Parmesan cheese, garlic and seasonings; mix well. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. Place meatballs on greased racks in shallow baking pans. Bake, uncovered, until no longer pink, 15-18 minutes. , Freeze option: Freeze cooled meatballs in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in the microwave.

1 egg
¼ cup milk
1 pound ground beef
¼ cup dry cream of wheat cereal
¼ cup minced onion
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
1 (12 fluid ounce) can evaporated milk
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, whisk together the egg and the milk. Add the beef, cream of wheat and onion and mix well. Shape into 1 inch balls. Place balls on a lightly greased baking sheet.
  • Bake at 350 degrees F (175 degrees C) for about 20 minutes.

1 lb ground beef
1 lb ground pork
1 cup panko breadcrumbs
½ cup onion, finely minced
¼ cup fresh parsley, finely chopped
2 cloves garlic, minced
2 eggs
salt, to taste
pepper, to taste
¼ cup butter
¼ cup all-purpose flour
2 cups beef broth
½ teaspoon ground allspice
½ teaspoon nutmeg, freshly grated
1 cup heavy cream
salt, to taste
pepper, to taste
fresh parsley, chopped, to serve

Steps:

  • Preheat oven to 425°F (220°C).
  • In a medium-size bowl mix together the beef, pork, bread crumbs, onion, parsley, garlic, eggs, salt, and pepper until just combined.
  • Take a walnut size of the meat mixture and roll into a ball. Repeat with remaining meat and transfer to an oiled rack on a sheet tray.
  • Bake meatballs for 15 minutes, until golden brown. Set aside.
  • Melt butter in a pan on medium heat and allow it to brown slightly. Stir in the flour completely and cook for about 1 minute creating a pale roux.
  • Add the beef broth, stir, and cook until it thickens.
  • Add in the ground allspice, nutmeg, salt, pepper, and the heavy cream, stir, and bring to a simmer for 5 minutes.

1/4 cup vegetable oil
32 ounces frozen meatballs, thawed
2 tablespoons all-purpose flour
14 ounces beef broth
1 1/2 cups whole milk or 1 1/2 cups half-and-half
1/4 cup sour cream
9 ounces egg noodles

Steps:

  • Heat oil in heavy large skillet over medium high heat.
  • Add meatballs and cook until brown, about 8 minute.
  • Transfer meatballs to a bowl.
  • Add flour to skillet and cook 1 min, scraping up the browned bits from bottom of the skillet.
  • Stir in broth and mil.
  • Return meatballs to skillet.
  • Simmer until liquid thickens enough to coat meatballs, about 5 minute.
  • Remove skillet form heat.
  • Stir in sour cream.
  • Meanwhile, cook noodles according to package instructions.

Put mushroom soup to clever use in this Scandinavian-style beef meatball dish with dill sauce

1 tbsp vegetable oil
12 beef meatballs
1 onion , finely chopped
1 garlic clove , finely chopped
294g can condensed mushroom soup
½ x small pack dill , roughly chopped
2 tsp mustard - French, wholegrain, or whatever you have in your cupboard
mashed potato and cooked cabbage , to serve

Steps:

  • Heat the oil in a large lidded pan. Cook the meatballs for 3-4 mins over a medium heat, turning often so that they brown all over. Remove from the pan with a slotted spoon and drain away any excess oil, reserving about 1 tbsp.
  • Add the onion and garlic to the pan and cook for 4-5 mins, stirring to soften. Stir in the soup with half a can of water. Return the meatballs to the pan and bring to the boil. Turn down the heat, cover and simmer for a further 10-15 mins until the meatballs are cooked through. Stir in the dill, mustard and some seasoning. Serve with mashed potato and cabbage.

2 (2 5/8 ounce) envelopes onion and mushroom soup mix
1 1/2 lbs ground beef
1 cup soft breadcrumbs (2 slices)
1/3 cup milk
1 egg
1 cup water
1/4 teaspoon ground allspice
1/4 teaspoon cardamom
1/4 teaspoon ground ginger
1 cup sour cream
1 tablespoon flour

Steps:

  • Combine 1 envelope of soup mix with ground beef, bread crumbs, milk and egg in a large bowl.
  • Mix Well.
  • Shap into 24 meatballs.
  • Brown meatballs in a large skillet. Pour off fat from skillet. Return all meatballs into skillet.
  • Blend remaining envelope soup mix with water & spices. Add meatballs.

1 onion, chopped
2 slices bread, cubed
1 (12 fluid ounce) can evaporated milk, divided

1 teaspoon ground nutmeg

Steps:

  • Melt butter in a skillet over medium heat; cook and stir onion in the melted butter until tender, 5 to 10 minutes.
  • Place bread cubes in a bowl; pour 1/2 cup evaporated milk over bread cubes. Set aside until bread cubes absorb milk.
  • Mix ground beef, ground pork, cooked onion, bread cube mixture, eggs, Worcestershire sauce, parsley, nutmeg, allspice, salt, lemon pepper, and ground black pepper together in a large bowl. Form mixture into golf ball-sized meatballs.
  • Heat olive oil in the same skillet used for onion over medium-high heat; cook meatballs in the hot oil, turning with tongs, until all sides are browned, 10 to 15 minutes. Pour in beef stock and simmer until meatballs are cooked through, 15 to 20 minutes. Transfer meatballs to a serving bowl, reserving liquid in the skillet.

My Grandmother made this when I was a kid, and I loved it. I was thinking about it recently, but I didn't have any cabbage, so I used cauliflower instead. That was good too. I never have any bouillon cubes around so I just use a teaspoon of miso instead.

1 lb green beans
2 cups chopped cabbage
1 tablespoon butter
1 tablespoon vinegar
1 teaspoon sugar
1 bouillon cube
1 tablespoon minced fresh dill or 2 teaspoons dried dill
1 tablespoon cornstarch
salt and pepper

Steps:

  • Wash, trim, slice and steam the green beans.
  • Save 2/3 cup of the cooking water.
  • Cool the beans in cold water to prevent them from cooking more from their own heat.
  • Chop the cabbage, and set both vegetables aside.
  • In a double boiler, melt the butter with the vinegar, sugar, bouillon cube, dill, salt and pepper to taste, and add the cornstarch mixed with a little cold water (about 1 tbsp.) Cook until the sauce thickens, stirring constantly, then thin it with the bean cooking water.
  • Add the cabbage and cook it for 5 to 10 minutes, stirring frequently, then add the beans.
  • Stir well to be sure the vegetables are well coated in the sauce. Thin with a little more water if needed.
  • Heat through and serve.

SCANDI-STYLE MEATBALLS WITH GRAVY

75g breadcrumbs
50ml milk
300g beef mince, at least 12% fat
300g pork mince, at least 5% fat
1⁄2 tsp ground allspice
1⁄2 tsp white pepper
1 tbsp plain flour
1 tsp Worcestershire sauce
drizzle of vegetable oil
small handful of dill, leaves picked
mashed potato or chips, to serve (optional)
150g fresh or frozen cranberries
75g caster sugar
20g butter
1 heaped tbsp plain flour
400ml good-quality beef stock
50ml single cream
splash of Worcestershire sauce

Steps:

  • Soak the breadcrumbs in the milk for 10 mins, or until the milk has been absorbed.
  • Combine the beef, pork, allspice, pepper, flour, Worcestershire sauce and 1 tsp salt in a large bowl, add the milk-soaked breadcrumbs and use your hands to squash everything together for a few minutes until well combined. Roll the mixture into meatballs about the size of a cherry tomato. Chill for at least 30 mins. Will keep covered and chilled for up to 24 hrs, or frozen for up to two months.
  • Make the berry sauce by cooking the cranberries and sugar in a small saucepan over a medium heat with a splash of water for 5-8 mins until the berries have burst and the sauce looks syrupy and glossy. Add a little more water if it becomes too thick. Leave to cool.
  • Heat the oven to 180C/160C fan/ gas 4 and have a baking tray to hand. Heat a drizzle of oil in a large frying pan over a medium heat. Cook the meatballs, in batches if needed, for 8-10 mins until nicely browned on all sides. Transfer to the baking tray and bake in the oven for another 10 mins while you make the gravy.
  • Melt the butter in the same frying pan you fried the meatballs in (no need to wash it first) and stir in the flour. Sizzle for a minute or two, then slowly add the stock, whisking to make a smooth sauce. Bubble for 2-3 mins to allow the gravy to thicken, then add the cream and Worcestershire sauce and some seasoning. Tip the meatballs back into the sauce, scatter with the dill and serve with mash or chips, if you like, and the cranberry sauce.
