SPICED CAULIFLOWER

Spiced Cauliflower image

I grew up with cauliflower boiled and served with buttered crumbs. Although I love melted butter, the two never melded for me, and cauliflower remained my least favorite vegetable until I discovered this recipe from Indian friends. I omitted the chile and prepared it for my brother who cannot tolerate any hot spice, and he raved about it. It's flavorful, and the microwave finish leaves the cauliflower slightly crisp, which we prefer.

Tips:

  • Choose the right cauliflower: Select a head of cauliflower that is dense and compact, with tightly packed florets. Avoid heads with any signs of bruising or discoloration.
  • Cut the cauliflower into uniform florets: This will help them cook evenly. Aim for florets that are about 1-2 inches in size.
  • Roast the cauliflower before caramelizing it: This will help to bring out its natural sweetness and prevent it from becoming too soft.
  • Use a flavorful spice blend: The spice blend you use will determine the overall flavor of the dish. Experiment with different combinations of spices to find one that you like.
  • Don't overcrowd the pan: When caramelizing the cauliflower, make sure to give the florets enough space so that they can brown evenly. Otherwise, they will steam instead of caramelizing.
  • Be patient: Caramelizing the cauliflower takes time. Don't rush the process, or the florets will not develop the desired flavor and texture.

Conclusion:

Spiced caramelized cauliflower florets are a delicious and versatile dish that can be served as an appetizer, side dish, or main course. They are easy to make and can be customized to your liking. With the right spice blend and a little patience, you can create a dish that is both flavorful and visually appealing. So next time you're looking for a healthy and satisfying dish, give spiced caramelized cauliflower florets a try.
