SPICED ITALIAN PLUMS (PRUNES) IN PORT

Spiced Italian Plums (Prunes) in Port image

We have an old Italian prune tree in the front yard that is usually loaded every year. We fix many of them this way, and have wonderfully sweet, spicy prunes for breakfast all year. We usually spend a whole weekend canning prunes and making apple butter. (another old tree in the yard). Any type plum would most likely work.

SPICED PRUNES

Spiced Prunes image

Use this delicious recipe in chef Mourad Lahlou's Couscous with Prunes and Toasted Almonds dish from "Mourad: New Moroccan."

Provided by Martha Stewart

Categories     Food & Cooking

Yield Makes 4 cups

Number Of Ingredients 8

4 cups Moyer or other unpitted prunes
3/4 cup champagne vinegar
3/4 cup sugar
2 tablespoons brandy
1 (3-inch) cinnamon stick
3/4 teaspoons Tellicherry peppercorns
3 allspice berries
1 bay leaf

Steps:

  • Place prunes in a medium bowl; set aside.
  • Place vinegar, sugar, brandy, cinnamon, peppercorns, allspice, and bay leaf in a medium saucepan and bring to a boil over medium-high heat, stirring to dissolve sugar. Pour over prunes and let cool to room temperature.
  • Transfer prunes to an airtight container and cover; let stand at room temperature for at least one week before using. Prunes can be stored at room temperature for up to 6 months.

Tips:

  • Choose the right prunes: Select plump, dark-colored prunes that are free from blemishes. Avoid prunes that are too soft or have a wrinkled appearance.
  • Soak the prunes: Soaking the prunes in hot water or juice helps to plump them up and soften them. This will make them more flavorful and easier to digest.
  • Use a variety of spices: Experiment with different spices to create unique flavor combinations. Some popular choices include cinnamon, nutmeg, ginger, cloves, and cardamom.
  • Add some sweetness: If you prefer a sweeter prune, add a little honey, maple syrup, or brown sugar to the recipe. You can also use dried fruit, such as raisins or apricots, to add natural sweetness.
  • Don't overcook the prunes: Overcooking can make the prunes tough and chewy. Cook them just until they are tender and slightly wrinkled.

Conclusion:

Spiced prunes are a delicious and versatile snack or side dish. They can be enjoyed on their own, added to yogurt or oatmeal, or used in baked goods. With their sweet and tangy flavor, they are sure to please everyone at your table. So next time you're looking for a healthy and satisfying treat, reach for a handful of spiced prunes.
