1 large poblano chile pepper
1 14-ounce bag frozen onion rings
Kosher salt and freshly ground pepper
2 teaspoons chili powder
1 teaspoon ground cumin
1/2 cup spicy ketchup
1 tablespoon chopped fresh cilantro
Grated zest and juice of 1 small lime
1 1/4 pounds lean ground beef
1 tablespoon vegetable oil
4 sesame hamburger buns, split and toasted
4 small romaine lettuce leaves

Steps:

  • Preheat the broiler. Put the poblano on a baking sheet and broil, turning, until charred in spots, about 8 minutes. Transfer to a plate and let cool. Reduce the oven temperature and bake the onion rings as the label directs. Season with salt, pepper and 1/4 teaspoon each chili powder and cumin.
  • Meanwhile, combine the ketchup, cilantro, a pinch of lime zest and half of the lime juice in a small bowl; add more lime juice and salt and pepper to taste. Refrigerate until ready to use.
  • Mix the ground beef, 1/2 teaspoon lime zest and the remaining 1 3/4 teaspoons chili powder and 3/4 teaspoon cumin in a large bowl with your hands until just combined. Form into four 3/4-inch-thick patties; season both sides with salt and pepper. Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the burgers and cook until browned, 2 to 3 minutes per side for medium rare.
  • Peel, stem and seed the broiled poblano; cut into strips. Place the burgers on the buns with the ketchup sauce, lettuce and poblano. Serve with the onion rings and the remaining ketchup sauce.

450 g high quality mincemeat
4 -5 spring onions
2 teaspoons allspice
1 teaspoon cayenne pepper
1 teaspoon sugar
3 tablespoons Worcestershire sauce
40 ml spiced rum
1 egg
4 teaspoons tomato puree
1 pinch salt and pepper

Steps:

  • Chop up the spring onions.
  • Blend the onions, lime juice, all spice, cayenne pepper, sugar, Worcestershire sauce and spiced rum together.
  • Mix in the tomato puree, a pinch of salt and pepper.
  • Beat the egg and mix that in too.
  • Break apart the mince in a bowl, mix in the spice mix, cover and leave in the fridge for at least one hour (or more if you have the time).
  • Form four patties with the mince.
  • Cook for 4 minutes on each side over a grill.

2/3 cup dried brown lentils
1/3 cup brown sushi rice
Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil, plus more for brushing
1 onion, finely chopped
1 large carrot, finely chopped
1 cup thinly sliced Tuscan kale
2 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon curry powder
1/8 teaspoon ground allspice
1/3 cup rolled oats
2 tablespoons fresh lemon juice
1 small clove garlic, grated
1/4 cup tahini
1/4 teaspoon hot sauce, plus more to taste
Kosher salt
4 pitas, tops trimmed
Shredded iceberg lettuce, diced tomatoes and sliced pickles, for serving

Steps:

  • Make the burgers: Combine 2 cups water, the lentils, rice, 1 teaspoon salt and a few grinds of pepper in a medium saucepan over high heat. Bring to a boil, then cover and reduce the heat to low. Cook until tender, 40 minutes. Remove from the heat and let sit, covered, 10 minutes. If there is water left in the saucepan, cook, uncovered, until evaporated.
  • Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the onion and carrot and cook, stirring, until browned, 8 to 10 minutes. Reduce the heat to medium and add the kale, garlic, cumin, curry powder and allspice. Cook, stirring, until softened, about 2 minutes. Add 2 tablespoons water and cook, stirring, until the liquid evaporates. Season with salt and pepper.
  • Pulse the oats in a food processor until finely ground with some coarse pieces. Add the warm lentil mixture and the vegetable mixture and pulse until combined but still chunky. Season with salt and pepper. Let cool. Form into four 4-inch patties (about 1/2 inch thick). Transfer to a baking sheet and freeze until firm, about 30 minutes.
  • Meanwhile, make the sauce: Combine the lemon juice and garlic in a small bowl; let sit 5 minutes. Whisk in the tahini, 2 tablespoons water and the hot sauce, thinning with more water, if needed. Season with salt and more hot sauce to taste.
  • Preheat a grill to medium high. Brush the burgers with olive oil on both sides. Grill until well marked, about 3 minutes per side. Grill the pitas until warmed. Serve the burgers in the pitas with lettuce, tomatoes and pickles and the tahini sauce.

This recipe came from a revelation in the '70s, when my friend Semeon Tsalbins introduced me to the lamb burger. It is ground lamb - shoulder is best - highly seasoned and grilled rare. Because lamb is the most full-flavored of the everyday meats, it makes a more delicious plain burger than beef. Cooked with nothing but salt, it's fantastic. Cooked with a variety of spices, as it is here, it's a game-changer. You can also stuff the burger, as Mr. Tsalbins does on occasion, with smoked mozzarella.

1 1/2 pounds boneless lamb shoulder, cut into chunks
1 medium (or 1/2 large) onion, peeled and cut into chunks
1 fresh chili, preferably jalapeño, seeded and minced

Salt

Steps:

  • If grilling or broiling, heat should be medium-high and rack about 4 inches from fire. Put lamb and onion into a food processor (in batches if your machine is small) and pulse until coarsely ground. Put in a bowl with chili, coriander, cumin and turmeric, and sprinkle with salt and pepper. Mix, handling the meat as little as possible, until combined. Taste and adjust seasonings. Handling meat as lightly as possible to avoid compressing it, shape it into 4 or more burgers.
  • To broil or grill, cook about 3 minutes on each side for rare and another minute per side for each increasing stage of doneness. For stovetop, heat a large skillet over medium heat for 2 or 3 minutes, then add patties; cook, undisturbed, for about 2 minutes, then rotate them so they brown evenly. Turn once and cook for a total of about 6 minutes for rare.
  • Garnish with diced mango, green and red pepper, red onion and scallion, and with shredded carrot and lettuce.

16 oz cola
1 lime, cut into 4 wheels
2 bunches scallion, green and white parts separated
¾ teaspoon kosher salt, divided
½ tablespoon unsalted butter
1 tablespoon garlic, minced
1 cup mayonnaise
1 tablespoon lemon juice
¼ teaspoon black pepper
4 potato rolls
24 oz ground beef, rolled into 8 (3-ounce) balls
1 teaspoon kosher salt
½ teaspoon black pepper
8 slices pepper jack cheese
8 Boston bibb letuce leaves, washed
8 slices vine ripe tomato
½ cup bread and butter pickles
4 skewers, 8 in (17 cm)

Steps:

  • Fill 4 rocks glasses with ice.
  • Pour 1½ ounces (50 ml) of Captain Morgan® Original Spiced Rum into each glass. Top each glass with 4 ounces of cola and give a quick stir.
  • Garnish each glass with a lime wheel, then serve. Enjoy while making the burgers.
  • Place a griddle pan (or cast iron pan) on the grill grates. Light the grill and set to high heat. Close the top of the lid and let the grill heat up with the griddle pan on it for 10-15 minutes.
  • Make the charred scallion aioli: Spray the now-hot griddle pan (or cast-iron pan) with nonstick spray. Place the white parts of the scallions on the pan and sprinkle with ¼ teaspoon kosher salt. Grill for 5 minutes, then flip and add the butter. Cook for 5-8 minutes more, flipping if necessary, until the scallions are well charred. Remove from the griddle and let cool.
  • Thinly slice scallion greens and add ⅓ cup of them to a medium bowl with the garlic, mayonnaise, lemon juice, remaining ½ teaspoon salt, and the pepper.
  • Roughly chop the charred scallions and add to the bowl, mixing well to combine. Refrigerate for at least 1 hour, or until ready to serve.
  • Make the smash burgers: Return the griddle to high heat and grease with nonstick spray.
  • Cut the potato rolls in half. Place the halves on the griddle and cook for 2-3 minutes, or until golden brown. Remove from the pan and set aside.
  • Wipe down the griddle pan with a damp paper towel, then grease again with nonstick spray.
  • Season each beef portion with the salt and pepper. Place half of the beef on the griddle, spacing well. Use a metal spatula to flatten and smash each burger, pressing down on the top of the spatula with the side of another spatula to help evenly distribute the pressure. Cook for 3-5 minutes, or until a nice brown crust forms. Flip the burgers, top each one with a slice of pepper Jack cheese, and cook for another 3 minutes, or until the cheese melts. Transfer to a plate and repeat with the remaining burgers and cheese.
  • Spoon a generous amount of charred scallion aioli onto each bottom burger bun, then top each with a piece of lettuce and slice of tomato, if using. Place 2 smash burgers on each bun, top with bread and butter pickles, and finish with the cheese-fried top bun. Insert a skewer in each burger to hold everything together.

1/2 cup brown sugar
1/2 cup lime juice
