Steps:
- Preheat the oven to 250 degrees F. Line a baking sheet with foil. Spread 2 tablespoons salt, the coriander seeds, peppercorns, paprika, red pepper flakes, dill seeds and minced garlic in an even layer on the baking sheet and roast until the garlic is dry, about 30 minutes; let cool. Transfer to a spice grinder and pulse several times. (The spiced salt can be made up to 1 week ahead; store in an airtight container.)
- Remove the steaks from the refrigerator about 1 hour before grilling to bring to room temperature; sprinkle each side with 1/2 teaspoon of the prepared spiced salt, then cover with plastic wrap and set aside.
- Preheat a grill to high and prepare for indirect grilling: On a charcoal grill, bank the coals to one side; on a gas grill, turn off half of the burners. Wipe the salt off the steaks and pat dry; brush lightly with olive oil. Grill over direct heat until marked on the bottom, about 2 minutes, then rotate 90 degrees F and cook 2 more minutes. Flip the steaks and repeat on the other side, then transfer to the cooler side of the grill (indirect heat); cook 5 more minutes per side for medium rare. Transfer to a cutting board and let rest 5 to 10 minutes.
- Meanwhile, grill the tomatoes over direct heat, turning, until marked, about 5 minutes. Serve with the steaks and the remaining spiced salt.

SPICY HAM SLICE/STEAK
I'm not a big ham fan but I just LOVE this dish. Easy to do, very forgiving - you can substitute different kinds of juice or soda. Ham steaks freeze well and thaw fast so it's good for a week night. Fairly economical if you get the ham on sale. I love to have it with orange rice where I substitute about a half a cup of OJ for water with plain old white or even brown rice, and a nice green salad. Enjoy!

- Mix all other ingredients together well and pour over ham.
- Marinate at least 30 minutes but can be longer (some times I do it in a baggie overnight).

Tips:
- Choose the right cut of steak: For this recipe, a flank steak or skirt steak is best. These cuts are relatively thin and have a good amount of marbling, which will help them stay tender and flavorful during cooking.
- Tenderize the steak: Before cooking, you can tenderize the steak by marinating it in a mixture of oil, vinegar, and spices. This will help to break down the connective tissue in the steak and make it more tender.
- Cook the steak over high heat: This will help to create a nice crust on the outside of the steak while keeping the inside juicy and tender.
- Use a meat thermometer to ensure that the steak is cooked to your desired doneness: For medium-rare, cook the steak to an internal temperature of 135 degrees Fahrenheit; for medium, cook to 145 degrees Fahrenheit; and for medium-well, cook to 155 degrees Fahrenheit.
- Let the steak rest before slicing and serving: This will allow the juices to redistribute throughout the steak, resulting in a more flavorful and tender steak.
Conclusion:
This recipe for Spiced Up Steak is a delicious and easy way to enjoy a flavorful and tender steak. By following the tips above, you can ensure that your steak is cooked perfectly every time. Serve this steak with your favorite sides, such as mashed potatoes, roasted vegetables, or a fresh salad.
