Almost all seasonings can be adjusted according to taste. (The Vietnamese chili garlic sauce can be found at any oriental grocery or even most regular groceries).

Tips:

  • Prep the chicken wings properly: Removing the tips and cutting the wings at the joint creates smaller pieces that cook evenly and are easier to eat. Patting the wings dry before seasoning ensures the rub adheres better and creates a crispy skin.
  • Use a flavorful spice rub: The five-spice powder, garlic powder, onion powder, paprika, and cayenne pepper create a balanced and aromatic rub that enhances the chicken's flavor without overpowering it.
  • Chill the chicken wings before cooking: This helps the rub penetrate the meat and results in more flavorful wings.
  • Cook the chicken wings at high heat: This creates a crispy exterior and juicy interior. Make sure the wings are cooked through by checking that the internal temperature reaches 165°F (74°C).
  • Serve with a creamy cilantro dipping sauce: The combination of cilantro, sour cream, mayonnaise, lime juice, and garlic creates a refreshing and flavorful dipping sauce that complements the spicy chicken wings.
