MY TASTY TASTY VENISON & PORK CHILI
My husband loves venison chili. We hope that you will enjoy this spicy dish, which can be made hotter or milder, by adding or decreasing the amount of chili powder and peppers. When cooking with venison, I always add ground pork or bacon because venison is very lean and can dry out easily. For the best tasting chili remove from heat, let the chili cool completely, then cover and refrigerate it until the next day.

- Lower heat, cover and simmer for 30 minutes.
- Add the drained kidney beans and stir to blend the flavors together.
- Place the chili in a slow cooker on low and cook for 2 - 3 hours.

- Adjust the spices accordingly and add more liquid if the mixture gets too dry.

Tips:
- Choose the right venison: Use venison from a young deer for the most tender and flavorful chili. If you're using venison from an older deer, be sure to trim off any excess fat and connective tissue before cooking.
- Brown the venison before adding it to the slow cooker: This will help to develop the flavor and prevent the meat from becoming dry.
- Use a variety of beans: This will add flavor, texture, and nutrients to your chili. Some good options include black beans, kidney beans, and pinto beans.
- Add plenty of spices: Chili is a great way to use up your favorite spices. Some good options include chili powder, cumin, oregano, and cayenne pepper.
- Don't forget the vegetables: Vegetables add flavor, texture, and nutrients to chili. Some good options include onions, peppers, and tomatoes.
- Let the chili simmer for at least 4 hours: This will allow the flavors to meld and develop.
- Serve with your favorite toppings: Some good options include sour cream, shredded cheese, and chopped cilantro.
