SPICY ASIAN RAMEN NOODLES

Spicy Asian Ramen Noodles image

I admit it, I still love ramen. In this yummy recipe, expect fast, easy, and spicy with salty, sweet, and sour flavors kicking in. The spiciness level can be adapted to your taste by adjusting the chili garlic sauce. This will make 4 side servings or 3 hearty main course servings.

Provided by lutzflcat

Time 15m

Yield 3

Number Of Ingredients 10

3 tablespoons reduced-sodium soy sauce
2 tablespoons sesame oil
1 ½ tablespoons brown sugar
1 tablespoon rice vinegar
2 teaspoons chili-garlic sauce, or more to taste
1 teaspoon grated fresh ginger
3 tablespoons creamy peanut butter
2 (3 ounce) packages ramen noodles
2 tablespoons chopped peanuts
2 medium green onions, thinly sliced diagonally

Steps:

  • Whisk soy sauce, sesame oil, brown sugar, rice vinegar, chili garlic sauce, and ginger together in a small bowl. Add peanut butter, whisking until well combined, and set aside.
  • Bring 4 cups of water to a boil in a pot. Discard the flavor packet and add ramen noodles to the boiling water. Cook until noodles are tender, 4 to 5 minutes. Drain noodles, reserving some of the noodle water in case you need to thin out the sauce later.
  • Pour sauce over ramen noodles, tossing until well coated. If sauce is too thick, thin out with a small amount of the reserved noodle water until you reach your desired consistency. Your hot noodles will soak up the sauce. Garnish with peanuts and green onion, and serve.

SPICY ASIAN GROUND TURKEY WITH CABBAGE

Spicy Asian Ground Turkey With Cabbage image

I've jotted down the basic recipe to a meal we enjoy. I usually adjust it to taste as I cook. I eat this in lettuce cups but I also serve it over brown rice or with noodles. I adapted the dipping sauce from another recipe because it like so much.

Provided by jrusk

Categories     One Dish Meal

Time 20m

Yield 4 serving(s)

Number Of Ingredients 16

4 scallions, coarsely chopped (green and white parts)
fresh ginger (2-inch piece peeled and grated or finely chopped)
1 cup green cabbage (thinly sliced)
1 jalapeno pepper, finely chopped and halved
2 garlic cloves, minced
2 tablespoons hoisin sauce
1 -2 teaspoon hot chili sauce
3 tablespoons low sodium soy sauce
1 tablespoon low sodium soy sauce
1/3 cup low sodium soy sauce
3 -4 tablespoons cilantro leaves
2 limes (zest and juice of 2 limes)
1 lb ground turkey
1 tablespoon vegetable oil
1 teaspoon dark sesame oil
1 tablespoon honey

Steps:

  • Heat 1 tablespoon vegetable oil in a wok or large pan. When hot add ground turkey and stir fry it for 5 minutes. Add Hoisin sauce, hot chili sauce and 1 tablespoon of soy sauce. Continue to stir fry until almost cooked through. (I use the pampered chef tool to break up the meat into small pieces).
  • In a bowl, combine the scallions, half of the ginger, cabbage, half of the chili pepper, the garlic, the 3 tablespoons of soy sauce and the lime zest.
  • Add vegetable bowl mixture to wok and continue to stir fry until cooked but still slightly crisp.
  • While the turkey and vegetables cook, make the dipping sauce. In a bowl, combine the remaining ginger and chili pepper, the 1/3 cup of soy sauce, the lime juice, the sesame oil, the honey and a splash of water. Taste and adjust the seasoning; if it's too salty, add another drizzle of honey.
  • Before serving the meat stir in the cilantro leaves.
  • Garnish with extra cilantro leaves and serve with the spicy lime dipping sauce.
  • Wrap in lettuce cups or serve over noodles or rice.

Tips:

  • Choose the right noodles: For this recipe, thin noodles like vermicelli or rice noodles are best. They cook quickly and soak up the sauce well.
  • Prep your vegetables in advance: Cut the vegetables into thin strips or slices so they cook evenly and quickly. You can also use a food processor to save time.
  • Make the sauce ahead of time: The sauce can be made up to 3 days in advance and stored in the refrigerator. This makes it a great option for meal prepping or busy weeknights.
  • Don't overcrowd the pan: When cooking the noodles, be sure to not overcrowd the pan. This will prevent them from sticking together and cooking evenly.
  • Season to taste: Be sure to taste the sauce and noodles before serving and adjust the seasonings as needed. You may want to add more soy sauce, chili sauce, or vinegar to taste.
