SPICY SALMON PATTIES
Made with canned salmon, these patties are good hot or cold. I usually serve them on buns with slices of ripe tomato, sweet red onion, and red and green bell pepper. -Barbara Coston of Little Rock, Arkansas

SPICY-SWEET GLAZED SALMON
I looked for a recipe for glazed salmon and didn't find one that used the ingredients I had on hand. So I threw together what I had and came up with this tangy, spicy sweet marinade that adds flavor, but doesn't mask the flavor of the salmon. My kids and sister loved it. They said it was better than 'restaurant salmon' It's great served with wild rice and stir fried veggies.

Steps:
- Place salmon in a shallow, flat dish, and set aside. Combine the vinegar, olive oil, soy sauce, water, lemon juice, red pepper flakes, onion powder, garlic powder, cilantro, and brown sugar in a blender. Blend until brown sugar dissolves. Pour the marinade over the salmon to cover evenly. Cover the dish, and refrigerate at least 2 hours.
- Line a broiling pan with foil. Remove salmon from marinade, and place on prepared broiling pan; season to taste with salt and pepper. Transfer remaining marinade to a saucepan.
- Turn on broiler to low.
- Broil salmon about 6 inches from the heat for 5 minutes; brush with remaining marinade. Broil an additional 5 to 10 minutes, brushing 2 or 3 more times with additional marinade. Salmon is done when fish is no longer bright red and can be flaked with a fork.
- Meanwhile, cook the remaining marinade over low heat until it thickens and reduces by one-third, 5 to 10 minutes. Use cooked marinade as a dipping sauce or drizzle over salmon just before serving.

SPICY SALMON CAKES / SWEET RED PEPPER SAUCE
This is an awesome recipe, I love to fix this with left over salmon. Sometimes the local butcher has a killer sale on salmon, so I'll pick up some extra and make up a batch of these. They have a sligt kick to them that can be adjusted to your personal taste by adjusting the amount of Cayenne pepper.

SPICED SALMON WITH SUGAR SNAP PEAS AND RED ONION
Seared sugar snap peas and red onions make a sweet accompaniment to silky salmon fillets in this lovely springtime one-pan meal. The salmon fillets, coated in a garlicky spice blend, are briefly browned, leaving fragrant, savory drippings in the pan. Those drippings then season the vegetables, infusing them as they cook. Keep an eye on the salmon, especially if you prefer it on the rare side. Thin fillets in particular are all too easy to overcook.

Steps:
- Heat oven to 400 degrees. In a small bowl, stir together 1 tablespoon oil, garlic and baharat. Season salmon all over with salt and black pepper. Rub spice mixture all over salmon. Set salmon aside while slicing the onions and sugar snap peas.
- Cut the onions in half root-to-stem, then peel them and slice into 1/4-inch-thick half-moons. Trim the peas and cut them in half crosswise.
- In a large, preferably nonstick ovenproof skillet, heat 2 tablespoons oil over high heat. Add fish, skin-side down if there's skin, and cook until browned, 3 to 4 minutes. Transfer salmon to a plate, browned-side up. (Don't sear the other side; the salmon will finish cooking in the oven.)
- Reduce heat to medium and add the remaining tablespoon of oil to the skillet. Stir in onions and cook until lightly golden, 3 minutes. Add snap peas and a pinch each of salt and pepper, stirring everything to coat with pan juices. Cook until peas have softened and browned slightly, 5 to 7 minutes. Put salmon, browned-side up, on top of peas and transfer pan to the oven. Roast until fish is just cooked through, 5 to 8 minutes longer.
- Squeeze a little lime juice over salmon and transfer fish to serving plates. Stir herbs into peas and onions. Taste, and add more salt and lime juice, if needed. Serve with the salmon, with the lime wedges on the side.
Tips:
- Use fresh, high-quality ingredients. Fresh salmon, sweet red peppers, and a variety of herbs and spices will make your salmon cakes and sauce taste their best.
- Don't overcook the salmon. Salmon is a delicate fish that can easily become dry and overcooked. Cook it just until it is opaque in the center, about 3-4 minutes per side.
- Use a food processor to make the salmon cakes. This will help to ensure that the cakes are evenly mixed and have a consistent texture.
- Be careful not to overmix the salmon cake mixture. Overmixing can make the cakes tough.
- Use a large skillet to cook the salmon cakes. This will help to prevent them from overcrowding and sticking to the pan.
- Serve the salmon cakes with a variety of dipping sauces. Tartar sauce, remoulade, and sweet red pepper sauce are all great options.
Conclusion:
These spicy salmon cakes with sweet red pepper sauce are a delicious and easy-to-make meal that is perfect for any occasion. The salmon cakes are moist and flavorful, and the sauce is tangy and sweet. Serve them with your favorite sides, such as roasted vegetables, mashed potatoes, or a salad.
