Provided by Vaughn Vreeland

Yield 3 servings

Number Of Ingredients 9

3 russet potatoes
2 tablespoons olive oil
2 teaspoons salt
½ lb ground beef
1 tablespoon taco seasoning
½ cup black beans, drained, rinsed
½ cup tomato, diced
1 cup cheddar cheese, plus more for topping
guacamole, to serve

Steps:

  • Preheat the oven to 350°F (180°C).

  • In the bowl with the scooped out potatoes, add the ground beef mixture and cheddar cheese. Mix well.
  • Scoop the potato mixture back into the potatoes and top with cheddar cheese.
  • Bake an additional 15 minutes until the cheese is melted.

This is a great twist to a classic dish!! My husband about licked the pan clean he loved it so much!!

Provided by thaless mommy

Categories     One Dish Meal

Time 1h

Yield 2-4 serving(s)

Number Of Ingredients 8

2 1/2 cups O'Brien potatoes
2 1/2 cups southern style hash browns
1/4 cup milk
0.5 (8 ounce) can cream of mushroom soup
1/2 cup sour cream
1/4 cup of chopped onion (optional)
2 cups cheese, shredded
1 -2 cup cubed ham (recommended Cure 81)

Steps:

  • Preheat oven to 350 degrees.
  • Combine all the ingredients.
  • Grease pan and pour in pan.
  • Cook for 45 min to 1 hour.

Tips:

  • Choose the right potatoes: Yukon Gold or red potatoes are ideal for this recipe as they hold their shape well and have a creamy texture.
  • Cut the potatoes evenly: This will ensure that they cook evenly.
  • Don't overcrowd the pan: If you overcrowd the pan, the potatoes will steam instead of fry and won't get crispy.
  • Season the potatoes well: Don't be afraid to add plenty of chili powder, cumin, and paprika. These spices will give the potatoes a delicious smoky flavor.
  • Cook the potatoes until they are tender and crispy: This will usually take about 15-20 minutes.
  • Top the potatoes with your favorite toppings: shredded cheese, sour cream, salsa, or guacamole are all great options.

Conclusion:

Spicy Southwestern Potatoes and Ham is a quick and easy recipe that is perfect for a weeknight meal. The potatoes are crispy and flavorful, and the ham adds a smoky and salty flavor.
