1 recipe of Spicy Steak Fajita Filling (recipe below)
8 x 8-9 inch Tortillas (recipe below or store bought)
1 cup of Greek Yoghurt
1 1/2 cups - 2 cups of Freshly Shredded Cheese (I used a mix of Pepper Jack, Cheddar and Provolone)
Salt and Pepper to taste
1/4 bunch cilantro chopped (leaves and stems)

Steps:

  • Spread 2 - 3 heaped teaspoons of yoghurt on a tortilla. Sprinkle a pinch of salt.
  • Add some of the onion/bell pepper mix and 1/8th of the thinly sliced Steak on one half of the tortilla.
  • Sprinkle about (loosely packed) 1/4 cup of shredded cheese and some chopped cilantro.
  • Fold over and place this on the heated pan - about 2-3 minutes on one side on low-medium heat. Start with medium heat, If the sides are browning too fast, lower the heat to low. Regulate the heat according to your stove top.
  • When the cheese has melted, remove tortilla from the heat and cut it in half.
  • Serve while hot with some Guacamole.

4 flour tortillas, each 12 inches in diameter
3/4 cup shredded cheddar cheese
1 (8 ounce) sirloin steaks, grilled, thinly sliced
1 jalapeno, minced
3/4 cup salsa, drained of excess liquid
1 tablespoon vegetable oil

Steps:

  • Place 2 of the flour tortillas on a work surface; evenly spread 1/4 cup of the cheese on top of each tortilla. Divide the steak evenly between the 2 tortillas. Sprinkle with jalapeno to taste. 1/2 cup grated cheddar cheese, plus

3 medium cloves garlic, thinly sliced
2 medium jalapenos, halved lengthwise, seeded, and thinly sliced crosswise
Salt and freshly ground black pepper
4 medium poblano peppers, quartered lengthwise, seeded, and sliced crosswise into 1/2-inch strips
1 1/4 cups low-sodium chicken broth
12 (6-inch) flour tortillas
3 cups shredded jack cheese

Steps:

  • Heat oven to 500 degrees F and arrange 1 rack in top and a second rack in middle.
  • Heat oil in a large frying pan over medium-high heat. 1 cup scallions, washed and chopped

1 cup red bell pepper cut into ¼" strips

  • Pre-heat oven to 325° F. In large sauté pan on medium heat, add just enough canola oil to cover pan. Add ground beef, chipotle pepper and salt and pepper to taste.
