Courtesy of the cookbook Moosewood Daily Special, this spicy, healthy, and delicious soup is one of my favourites! It's the perfect cold-chasing winter soup, and one of the few things that make me grateful for colder weather!

2 cups carrots, peeled & sliced
2 cups onions, sliced
1 cup parsley, chopped
8 garlic cloves, sliced
8 slices fresh ginger, about the size of a quarter
1 -2 dried chilies, sliced in half or 1/8-1/4 crushed red chili pepper flakes
8 cups water
1 cake firm tofu (12 ounces)
1 tablespoon fresh ginger, grated
1 -2 dried chilies, sliced in half or 1/8-1/4 crushed red chili pepper flakes
1 tablespoon canola oil or 1 tablespoon peanut oil
3/8 cup soy sauce (2 tbsp)
1/3 cup carrot, julienned
1/3 cup red pepper, julienned
2 cups greens, shredded (bok choy, mustard greens, kale, chinese cabbage, spinach, or pea shoots)
3 drops dark sesame oil
2 scallions, thinly sliced

Steps:

  • Preheat oven to 375°F.
  • Place stock ingredients in a large soup pot, cover, and bring to a boil on medium heat. Lower the heat and simmer for 45 minutes.
  • Meanwhile, slice the tofu into small, bite sized cubes and set aside in baking dish. Combine the ginger, garlic, chilies, oil, and 2 tbsp of the soy sauce in a heavy skillet, saute for a few seconds, and then add the tofu. Gently toss until evenly coated. Bake for 25 minutes, stirring twice to roast evenly. Remove the chili halves.
  • Strain the stock into another soup pot. Add the baked tofu and the carrots and peppers, and simmer for 3 to 4 minutes. Stir in the shredded greens. When the soup returns to a simmer, remove from the heat and add the sesame oil and the remaining 1/4 cup soy sauce.
  • Serve immediately, scattering freshly sliced scallions into each bowl.

1 quart vegetable broth
2-inch piece fresh ginger, cut in half
Pinch sugar
1/3 cup rice vinegar
1/4 cup soy sauce
2 tablespoons oyster sauce
1/2 teaspoon Sambal
1 pound firm tofu
1 cup bread crumbs, Panko preferred
Pinch cayenne pepper
1/2 teaspoon hot paprika
Salt and pepper, to taste
2 eggs, lightly beaten
2 tablespoons peanut oil
2 tablespoons sesame oil
1/2 tablespoon minced fresh ginger
2 garlic cloves, minced
1 dried Hawaiian chile, chopped
1 pound Chinese broccoli, roughly chopped
1/2 pound udon noodles, cooked
1 bunch green onions, julienned
1/4 cup chopped cilantro
1/2 cup peanuts, roasted and salted

Steps:

  • To prepare the soup, in a saucepan over medium-low heat, combine the vegetable broth, ginger, sugar, rice vinegar, soy sauce, oyster sauce and sambal. Allow to simmer 15 minutes to mingle the flavors.
  • To prepare the tofu steaks, cut the tofu block lengthwise, then cut in half to make 4 slabs. Lay several layers of paper towels on a cutting board then place the tofu, side by side, on top. Cover the steaks with more paper towels and press down to drain out some of the water in the curd (making it denser and hold together better when cooked.) Combine the bread crumbs, cayenne, paprika, salt and pepper. Dip each piece of tofu into the beaten eggs then dredge in the seasoned bread crumbs to coat. Heat peanut oil in a skillet over medium-high heat. Fry the tofu steaks 4 minutes each side. Remove to a platter lined with fresh paper towels. Add sesame oil to the skillet, stir-fry the ginger and garlic with the chili for 2 minutes to build a base flavor. Add the broccoli and saute 3 minutes until it begins to soften, season with salt and pepper. Divide the udon noodles and spicy broth among 4 bowls. Add the broccoli then lay a piece of tofu on top. Garnish with a sprinkle of green onions, cilantro, and peanuts before serving.

1/2 cup chopped red onion

6 cups low sodium vegetable broth

1 tablespoon hot mung bean paste or 1 tablespoon hot sauce

One 1-pound block extra-firm tofu
3 tablespoons low-sodium soy sauce
2 tablespoons toasted sesame oil
1/2 teaspoon chili paste or Tabasco (optional)
3 tablespoons freshly squeezed lime juice
1 tablespoon grated ginger
2 pounds bitter greens, such as collard, mustard, baby bok choy, or dandelion, washed, trimmed, and torn into pieces
1 teaspoon sesame seeds, lightly toasted
1/4 teaspoon crushed red-pepper flakes
6 cloves garlic, thinly sliced

Steps:

  • Cut tofu in half lengthwise, then cut each piece across into 6 slices. Place tofu on a paper-towel-lined plate. Cover with more paper towels; place another plate on top. Weight with a few soup cans. Chill 30 minutes so towels absorb excess water.

Cook, tossing occasionally, until greens are wilted and most of the liquid has evaporated, 5 to 8 minutes. Transfer to platter with tofu. Sprinkle with sesame seeds and red pepper; serve.
