Juice of 1/2 lemon
Kosher salt and freshly ground pepper
1 3/4-pound boneless sirloin steak

6 ounces baby spinach or chopped regular spinach

Grill the steak until marked on the bottom, about 7 minutes, then turn and cook 4 to 5 more minutes for medium-rare. Grill the onion rings until charred, about 2 minutes per side. Transfer the steak and onion rings to a cutting board and let rest 5 minutes.

  • For the glaze: Add the orange peel, bourbon, cherry juice and some black pepper to a small saucepan. Simmer until reduced to 1/4 cup, about 10 minutes. Remove the steak from the pan to rest. For the sandwich build: Pile some Bourbon Creamed Spinach on the bottom piece of the pretzel roll. Thinly slice the steak against the grain and place on top of the spinach. Top with some red onions and finish with the top of the roll. Repeat for the remaining sandwiches.Strain the thawed spinach in a colander and squeeze liquid out with a towel. Melt the butter in a large straight-sided skillet over medium heat. Add the garlic and onions, season with salt and pepper and cook until onions are softened, about 5 minutes. Turn off the heat and add the bourbon. Stir to combine, turn heat back on to medium and simmer 1 minute. Add the cream, and cook until the cream is reduced by half, about 5 minutes. HAM STEAK ON CREAMED SPINACH

Ham Steak on Creamed Spinach image

Categories     Milk/Cream     Sauté     Quick & Easy     Ham     Spinach     Bon Appétit

Yield 2 servings; can be doubled

Number Of Ingredients 6

1 8- to 10-ounce ham steak (1/2 inch thick)
2 teaspoons butter
2 garlic cloves, minced
3/4 cup half and half
1 10-ounce package frozen chopped spinach, thawed, squeezed dry
1/8 teaspoon ground nutmeg

Steps:

  • Season ham generously with pepper. Melt 1 teaspoon butter in heavy medium skillet over medium-high heat. Add ham to skillet; sauté until golden brown, about 3 minutes per side. Transfer ham to plate; tent with foil to keep warm.
  • Melt 1 teaspoon butter in same skillet over medium heat. Add garlic and stir 30 seconds. Add half and half and simmer until slightly reduced, scraping up browned bits, about 3 minutes. Add spinach and nutmeg. Stir until spinach mixture thickens slightly, about 2 minutes. Season with salt and pepper.
  • Spoon creamed spinach into 2 plates. Cut ham steak in half; place atop spinach and serve.

Tips:

  • Choose the right steak: For this recipe, a tender cut of steak is best, such as ribeye, strip loin, or tenderloin.
  • Cook the steak to your desired doneness: The cooking time will vary depending on the thickness of the steak and how you like it cooked. For a medium-rare steak, cook for about 5-7 minutes per side.
  • Make sure the spinach is well-drained: If the spinach is too wet, it will make the creamed spinach watery. Be sure to squeeze out as much excess moisture as possible.
  • Use fresh herbs: Fresh herbs, such as parsley, thyme, and rosemary, will add a lot of flavor to the creamed spinach. If you don't have fresh herbs, you can use dried herbs, but use about half the amount.
  • Don't overcook the creamed spinach: Creamed spinach should be cooked just until it is heated through. Overcooking will make it tough and rubbery.
  • Serve the steak and creamed spinach immediately: This dish is best served hot. If you need to make it ahead of time, you can cook the steak and creamed spinach separately and then reheat them before serving.

Conclusion:

Steak with creamed spinach and potatoes is a classic dish that is sure to please everyone at the table. The tender steak, creamy spinach, and fluffy potatoes are a perfect combination. This dish is also relatively easy to make, so it's perfect for a weeknight meal. With a few simple tips, you can make this dish that is both delicious and impressive.
