Time 35m

Yield 6

Number Of Ingredients 8

5 tablespoons butter, divided
1 onion, chopped
1 stalk celery, chopped
3 cups chicken broth
8 cups broccoli florets
3 tablespoons all-purpose flour
2 cups milk
ground black pepper to taste

Steps:

  • Melt 2 tablespoons butter in medium sized stock pot, and saute onion and celery until tender. Add broccoli and broth, cover and simmer for 10 minutes.
  • Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot.
  • In small saucepan, over medium-heat melt 3 tablespoons butter, stir in flour and add milk. Stir until thick and bubbly, and add to soup. Season with pepper and serve.

CREAMY BROCCOLI WITH MUSTARD SOUP

Creamy Broccoli With Mustard Soup image

A pureed vegetable soup can be an impressive, easy and affordable first course for an elegant dinner, or even a light dinner on its own with salad and bread.

Provided by USA WEEKEND columnist Pam Anderson

Categories     Soups, Stews and Chili Recipes     Soup Recipes     Cream Soup Recipes     Cream of Broccoli Soup

Yield 8

Number Of Ingredients 14

2 tablespoons olive oil
1 ½ pounds broccoli - stems peeled and cut into 1-inch chunks, remaining broccoli cut into medium florets
1 large onion, cut into large dice
1 tablespoon butter
1 pinch sugar
3 large garlic cloves, thickly sliced
1 ½ teaspoons dry mustard
½ teaspoon basil
¼ teaspoon oregano
⅛ teaspoon cayenne pepper
3 cups chicken broth, homemade or from a carton or can
1 ½ cups half-and-half (or whole milk)
Salt and freshly ground pepper, to taste
Garnish: toasted pine nuts*

Steps:

  • Heat oil over medium-high heat in a large, deep saute pan until shimmering.
  • Add broccoli, then onion; saute, stirring very little at first, then more frequently, until vegetables start to turn golden brown, 7 to 8 minutes.
  • Reduce heat to low and add butter, sugar and garlic; continue cooking until all vegetables are a rich spotty caramel color, about 10 minutes longer.
  • Add mustard, basil, oregano, and cayenne pepper; continue to saute until fragrant, 30 seconds to 1 minute longer.
  • Add broth; bring to a simmer over medium-high heat. Reduce heat to low and simmer, partially covered, until broccoli is tender, about 10 minutes.
  • Using an immersion blender or traditional blender, puree until very smooth, 30 seconds to 1 minute. (If using a traditional blender, vent it either by removing the lid's pop-out center or by lifting one edge of the lid. Drape the blender canister with a kitchen towel. To 'clean' the canister, pour in a little half-and-half, blend briefly, then add to the soup.)
  • Return to pan (or a soup pot); add enough half-and-half so the mixture is souplike, yet thick enough to float garnish. Taste, and add salt and pepper if needed. Heat through, ladle into bowls, garnish and serve.

CREAM OF BROCCOLI SOUP

Cream of Broccoli Soup image

This soup is super creamy in texture, but it contains very little actual cream. The butter and flour mixture -- what's called a roux -- gives it body and silkiness.

Provided by Martha Stewart

Categories     Food & Cooking     Soups, Stews & Stocks     Soup Recipes

Time 1h

Number Of Ingredients 7

1/4 cup (1/2 stick) unsalted butter
1 medium yellow onion, diced small
1/4 cup all-purpose flour (spooned and leveled)
4 cups low-sodium chicken broth
1 pound broccoli, cut into florets, stems peeled and chopped
1/4 cup heavy cream
Coarse salt and ground pepper

Steps:

  • In a medium pot, melt butter over medium. Add onion and cook, stirring occasionally, until softened, 8 minutes.
  • Add flour and cook, stirring, until combined, 1 minute.
  • Whisking constantly, add broth and 1 cup water and bring to a boil over high. Reduce heat and simmer, whisking occasionally, 10 minutes.
  • Add broccoli and bring to a simmer. Cook until broccoli is very tender, 20 minutes.
  • Transfer mixture to a large bowl. In batches, fill a blender halfway with mixture and puree until smooth; to allow heat to escape, remove cap from hole in lid, cover lid with a dish towel, and hold down firmly while blending. Return soup to pot as pureed.
  • Add cream and heat over medium until warmed through. Season with salt and pepper. Thin with broth or water, if desired.

CREAM OF BROCCOLI SOUP

Cream of Broccoli Soup image

This recipe was adapted from a recipe on drfuhrman.com. Even though it is vegan, it has a delicious, creamy flavor and texture. A high speed blender like Vitamix works best for this recipe so the cashews turn creamy when blended.......For each can of low sodium broth, I substitute 2 cups water, 1 tablespoon VegiZest (from drfuhrman.com) and 1/8 teaspoon salt.....You can reduce prep time by using frozen or pre-chopped vegetables and jarred garlic.

Provided by Anne Sainz

Categories     Vegetable

Time 1h30m

Yield 8 serving(s)

Number Of Ingredients 7

1 onion, chopped
2 garlic cloves, chopped
4 turnips, peeled and chopped
10 ounces kale, de-stemmed and chopped
4 broccoli florets, stems chopped and florets cut to bite size
3 (15 ounce) cans low sodium vegetable broth
1/2 cup raw cashews

Steps:

  • Remove the center stem from the kale and discard. Wash and chop kale leaves and put in a large soup pot (at least 7 quarts). If you don't know how to remove the stems from kale, Google: remove kale stems.
  • Add chopped onion, garlic, turnips, broccoli and broth to soup pot.
  • Bring soup to a boil, stirring several times so bottom doesn't burn.
  • Reduce heat, cover and simmer, stirring occasionally until vegetables are soft, about 20-25 minute.
  • Remove about half the soup and blend with the cashews until smooth. Return mixture to pot and reheat.

CREAMY BROCCOLI SOUP

Creamy Broccoli Soup image

This is one of the best formulas for a creamy, savory broccoli soup - and it doesn't include any cream. Borrowing from the concept of using coconut water to provide the kind of richness that is reminiscent of bone broth in Yi Jun Loh's ingeniously vegan Malaysian ABC soup, this simple green elixir starts with a base of umami-loaded vegetables seared in olive oil then braised in coconut water. With silken tofu providing creaminess, this verdant, vegetable-powered soup can be pleasurably contrasted, in flavor and in temperature, with an optional dollop of sweet, cool ricotta. (If you're keeping this vegan, you'll still have plenty of creamy richness even if you leave the ricotta out.)

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 12

2 pounds broccoli
1/4 cup extra-virgin olive oil, plus more for drizzling
1 large onion, coarsely chopped
1 medium carrot, coarsely chopped
1 medium tomato, coarsely chopped
1 small sweet potato (preferably white-fleshed), coarsely chopped
Kosher salt and black pepper
1 teaspoon garlic powder
1 quart unsweetened coconut water, plus more if desired
1 (16-ounce) container silken tofu, drained
Ricotta, for serving (optional)
Finely chopped parsley, for serving (optional)

Steps:

  • Cut off the broccoli stems, then cut the stems into 1-inch-thick slices. Separate the florets into small pieces. Reserve the stems and florets separately.
  • Heat a large Dutch oven or pot over medium-high and add the olive oil. Stir in the onion, carrot, tomato, sweet potato and the broccoli stems, spread in an even layer and season generously with salt and pepper. Let the vegetables on the bottom sear without stirring until lightly browned, 10 to 15 minutes.
  • Add the garlic powder and stir with a wooden spoon to hydrate the spice in the fat and continue cooking for another minute or so. The tomato will start to break down and get jammy.
  • Add the coconut water, raise the heat to high and bring the soup to a boil. Cover, lower the heat to keep the soup at a gentle boil and continue cooking until all of the vegetables are mostly softened and the stock is imbued with savory flavor, about 10 minutes. For a creamier texture, remove the broccoli stems to snack on or discard; for more broccoli flavor (and roughage), leave the stems in.
  • Stir in the broccoli florets and tofu, raise the heat to high and bring the soup to a boil. Cover and cook until a paring knife easily cuts the stem part of a broccoli floret, 8 to 10 minutes.
  • Carefully ladle the contents of the pot into a blender and blend until smooth. Taste and add salt and pepper as needed, then add more coconut water or water to thin out the soup to your desired thickness.
  • Serve hot in shallow bowls, each serving dolloped with a spoonful of fridge-cold ricotta, if using, and lightly drizzled with extra-virgin olive oil and sprinkled with herbs, if desired.

Creamy Broccoli Soup Recipe by Tasty image

Here's what you need: olive oil, small onion, garlics, kosher salt, pepper, mashed potato, broccoli, low sodium vegetable broth, milk, ground nutmeg

2 small heads broccoli, including stems, chopped
2 ½ cups low sodium vegetable broth

Tips:

  • Choose fresh, tender broccoli. Look for broccoli with tightly closed florets and a deep green color. Avoid broccoli that is wilted or has yellow or brown spots.
  • Wash the broccoli thoroughly. Soak the broccoli in a bowl of cold water for a few minutes, then rinse it under running water.
  • Cut the broccoli into small pieces. This will help the broccoli cook evenly.
  • Cook the broccoli until it is tender but still has a slight crunch. Overcooked broccoli will be mushy and lose its flavor.
  • Use a high-quality vegetable broth. The broth is the base of the soup, so it's important to use a good one. Look for a broth that is low in sodium and has a rich, flavorful taste.
  • Add your favorite seasonings. Salt, pepper, garlic powder, and onion powder are all classic seasonings that work well with broccoli soup. You can also add other herbs and spices, such as thyme, rosemary, or nutmeg.
  • Serve the soup immediately. Broccoli soup is best served hot, so make sure to serve it as soon as it's cooked.

Conclusion:

Broccoli cream soup is a delicious, healthy, and easy-to-make soup that is perfect for a quick lunch or dinner. It's also a great way to use up leftover broccoli. With just a few simple ingredients and a little bit of time, you can have a delicious bowl of broccoli cream soup that the whole family will enjoy.
