Simply because I wanted to enjoy delicious taste of fresh melons. Also, melon, mint, and lemon dressing is a classic combination which I can never have enough. Each component of this salad compliments other. Above all, nothing overpowers the sweet melon flavor.I'm sure you wondering: why honey in dressing for an already sweet fruit salad?!Well, honey and lemon make a very lite, sweet and sour dressing which balances the sweetness of melons. 2 lbs Melon, fonzy or honeydew melon
1 lbs Melon, muskmelon or cantaloupe, scooped or diced
1/2 lbs Strawberries, 10 oz, thin sliced
8-10 Mint, fresh mint leaves, for garnish
4 tbsp Lemon, juice plus 1 tsp zest
1 tbsp Agave Syrup
Salt and Black Pepper, adjust per taste
2 tbsp Olive Oil

Steps:

  • To make vinaigrette, in a small bowl, add honey, lemon juice, lemon zest, and olive oil. Whisk to blend oil with lemon and agave. Taste and add salt and black pepper. Set aside.
  • To assemble salad, cut and discard seeds of both melons. Slice melon into bite size pieces or scoop melon balls using melon scoop. Slice strawberries. Gently coat melon and strawberries in dressing. Garnish with mint and serve.

1 Galia melon, cut into ½" cubes (about 3 ½ cups)
1 cup strawberries, halved
¼ cup fresh mint, shredded or chopped
3-4 tablespoons feta cheese, crumbled
Juice of ½ lemon
2 tablespoons balsamic glaze

Steps:

  • Using a sharp knife, cut a round off the bottom and top of the melon so that the melon is stable on the cutting board.
  • Once the melon is stable, use your knife to cut the skin off, following along the curve of the melon.
  • When the melon's skin has been completely removed, cut the melon in half.
  • Use a spoon to scoop the seeds out of the center of the melon.
  • Once the seeds have been disposed of, use your knife to cut the melon into strips, then dice it into ½" cubes.
  • Transfer the melon to a bowl.

1 pound strawberries, hulled and quartered
1 English cucumber, chopped
1/2 small cantaloupe, peeled and chopped (about 2 1/2 cups)
2/3 cup fresh dill, chopped
Kosher salt and freshly ground pepper
4 cups baby spinach (about 4 ounces)
1/3 cup mustard vinaigrette (see directions)
Soak the red onion in cold water, 10 minutes; drain and pat dry.

Steps:

  • Combine the onion, strawberries, cucumber, cantaloupe and dill in a large bowl. Season with salt and pepper and toss to combine. Let stand until the cucumber is juicy, about 10 minutes.
