My favorite homemade ice cream is strawberry/banana. This past weekend, I had a strawberry cake mix, a can of strawberry icing, a ripe banana, and some nuts in my kitchen and I thought, "why not". I topped this bundt cake with a powdered sugar lemon glaze, but I also want to try it with a cream cheese icing.

1 box duncan hines strawberry cake mix
1 can(s) duncan hines strawberry icing
3/4 c vegetable oil
3 eggs
1 c water
1/2 tsp pure vanilla
1/2 c sour cream
2/3 c chopped pecans or walnuts
1 or 2 mashed ripe bananas
GLAZE
1/2 c powdered sugar
lemon juice

Steps:

  • 1. To cake mix, add the eggs, oil, icing, sour cream, water, nuts and bananas. Stir until well blended and smooth.
  • 2. Prepare a bundt pan, add batter, and bake in a 350 degree oven for 45-50 minutes. (Until cake is pulling away from the sides of the pan.)
  • 3. Let sit for 5 minutes and then turn out onto cake plate and let it cool. To the powdered sugar, stir in enough lemon juice to make a glaze and drizzle over the cake.
  • 4. OPTIONAL: Instead of doing a lemon glaze, ice the cake with your favorite cream cheese/powdered sugar frosting.

This recipe belongs to my son's mother-in-law, Constance. It is so good and refreshing plus a beautiful cake. I have made it myself a few times and find it to be very easy to make. Peggi Tebben has provided us with a pic since she made it a couple of days ago. She did a great job, too.

1 box duncan hines white cake mix
1 small box strawberry jello (dry)
1 small box vanilla instant pudding mix
1/2 c canola or vegetable oil
1 stick butter, softened
1/2 c milk (i use 1%)
4 medium eggs
1 c fresh (or frozen) strawberries, chopped
1 c chopped pecans
ICING:
16 oz powdered sugar
1 stick butter, softened
1/2 c fresh (or frozen) strawberries, chopped
1/2 c coconut
1/2 c chopped pecans

Steps:

  • 1. CAKE: Mix all ingredients and bake in three 9" floured and greased cake pans at 350 for 25 - 30 minutes. Cool in cake pans for 10 minutes, remove and cool completely before frosting.
  • 2. ICING: Mix all ingredients together and spread between, on sides and top of cooled cake layers.
  • 3. Tip: Our fellow member, Rose Rauhauser, made the cake and froze it and then iced it once the cake had thawed. Thanks, Rose, for sharing this tip.

CAKE
1 box white cake mix
1 box strawberry jello
1 c oil
1 c fresh strawberries chopped and sweetend in juice
1 c coconut
1/2 c milk
4 eggs
1 c chopped nuts
FROSTING
1 box confectioners' sugar, i used 2 cups more and a little water
1 stick butter =1/2 cup
3/4 c chopped strawberries in sweented juice
1/2 c chopped nuts
1/2 c coconut

Steps:

  • 1. Preheat the over 350 2-9" pans or 3-8" pans Spray the pans with bakers joy
  • 2. Mix all the cake ingredients together and pour in pans. Bake until done and let completely cool
  • 3. Mix the frosting ingredients and ice the layers and cake.

Tips:

  • Use ripe and juicy strawberries for the best flavor.
  • If you don't have a food processor, you can chop the nuts and strawberries by hand. Just be sure to chop them finely.
  • To make sure the cake is cooked through, insert a toothpick into the center. If it comes out clean, the cake is done.
  • Let the cake cool completely before frosting it. This will help the frosting set properly.
  • If you don't have time to make the frosting, you can use a store-bought frosting instead.
