600 g seedless watermelon flesh ((1lb 5oz))
8 large strawberries
2 small handfuls mint leaves ((10g))
1 cup white rum ((250ml) (optional))
2 Tbsp lemon juice
2 cups chilled lemonade ((500ml))
2 cups chilled soda water ((500ml)
Ice cubes
8 slices fresh watermelon
Fresh mint leaves
8 reusable or paper straws ((optional))

Steps:

  • MAKE COCKTAIL BASEAdd watermelon, hulled strawberries, mint, rum and lemon juice to a blender. Depending on the size of your blender, you may need to do this in two batches. Process until well blended. At this point you can strain the mixture through a fine-mesh sieve to remove strawberry seeds and mint pieces, if you like.
  • SERVEDivide mixture between individual glasses. Add a couple of ice cubes to each glass and top up with an equal mixture of lemonade and soda water. Stir gently to combine. Cut a slit in the top of each watermelon slice and arrange on the rim of each glass. Garnish with mint leaves and add straws, if using.

1/2 cup lemon juice
12 cups cubed watermelon (about 3-1/2 pounds)
2 cups fresh strawberries or raspberries
2/3 cup sugar
1-1/2 teaspoons minced fresh mint
Small watermelon wedges and fresh mint leaves

8 cups 3/4-inch seedless watermelon cubes (from 1/2 small watermelon, rind removed), plus more for garnish
Scant 2 1/4 teaspoons unflavored gelatin (one 1/4-ounce envelope)
1/4 cup cold water
1/4 teaspoon coarse salt
1 1/2 teaspoons fresh lemon juice
Rose Hip-Hibiscus "Ice Cubes"(optional)
Mint or basil sprigs, for garnish

Steps:

  • Puree watermelon cubes in a blender or food processor until smooth. Press through a fine sieve into a large bowl and discard solids. Measure 3 cups strained juice.
  • Prepare an ice-water bath. Sprinkle gelatin over cold water, and let stand until softened, about 5 minutes. Bring 1/2 cup watermelon juice and salt to a simmer in a small saucepan over medium-high heat. Add softened gelatin, stirring to dissolve. Strain into a bowl set in ice water bath. Stir in remaining 2 1/2 cups watermelon juice and the lemon juice.
