6 tablespoons unsalted butter, melted, plus room-temperature butter for pan
1 cup all-purpose flour (spooned and leveled), plus more for pan
1/2 cup packed light-brown sugar
1/4 teaspoon salt
1/2 pound rhubarb, cut into 1/2-inch pieces
1 tablespoon light-brown sugar
1 cup all-purpose flour (spooned and leveled)
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
1 cup confectioners' sugar
2 large eggs
1/2 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350 degrees. Butter an 8-inch square baking pan. Line with parchment paper, leaving a 2-inch overhang on two sides. Butter and flour parchment and pan, tapping out excess flour.
  • Make streusel: Whisk together butter, brown sugar, and salt. Add flour and mix with a fork until large crumbs form. Refrigerate until ready to use.
  • Make cake: In a medium bowl, combine rhubarb, brown sugar, and 1/4 cup flour. In another medium bowl, whisk 3/4 cup flour, baking powder, and salt. In a large bowl, using an electric mixer, beat butter and confectioners' sugar until light and fluffy; beat in eggs, one at a time. With mixer on low, beat in vanilla, then flour mixture. Spread batter in prepared pan. Sprinkle with rhubarb and top with streusel.
  • Bake cake until golden and a toothpick inserted in center comes out with moist crumbs attached, 45 to 50 minutes. Let cool completely in pan. Using paper overhang, lift cake from pan. Cut into 16 bars.

1/3 cup cold butter
FILLING:
1-1/4 cups sugar
1/4 cup all-purpose flour
1/2 teaspoon salt
2 eggs, lightly beaten
3 cups chopped fresh or frozen rhubarb
TOPPING:
3/4 cup all-purpose flour
1/2 cup sugar
1/4 teaspoon ground cinnamon
1/3 cup cold butter

Steps:

  • In a bowl, combine flour and confectioners' sugar. Cut in butter until crumbly. Press into a greased 9-in. square baking dish. Bake at 350° for 15-18 minutes or until brown around the edges., Meanwhile, in a large bowl, combine the sugar, flour and salt. Add eggs; mix well. Fold in the rhubarb. Pour over crust. For topping, combine the flour, sugar and cinnamon in a small bowl; cut in butter until crumbly. Sprinkle over filling. Bake at 350° for 45-50 minutes or until rhubarb is bubbly. 1/3 cup powdered sugar
1/3 cup margarine or butter
FILLING
3/4 cups sugar
1/4 cup flour
1/2 teaspoon salt
2 eggs, slightly beaten
3 cups fresh or frozen coarsely chopped rhubarb
TOPPING
3/4 cup All Purpose or Unbleached Flour
1/2 cup sugar
1/4 teaspoon cinnamon
1/3 cup margarine or butter

Steps:

  • Heat oven to 350°F. Lightly spoon flour into measuring cup; level off. In medium bowl, combine 1 cup flour and powdered sugar. Using pastry blender, cut in 1/3 cup margarine until crumbly. Press in bottom of ungreased 9-inch square pan. Bake at 350°F. for 15 minutes. In medium bowl, combine all filling ingredients; blend well. Pour over partially baked crust. In medium bowl, combine all topping ingredients to form crumbs; sprinkle over rhubarb mixture. Bake at 350°F. for 45 to 55 minutes or until topping is light golden brown and rhubarb is tender. 6 to 8 servings.
