Steps:

  • Slice 6 buns (or how many you desire, just increase the ingredients).

  • Wrap each bun in heavy-duty foil that has been sprayed well with non-stick cooking spray.

Every college has one: some kind of nasty-fantastic amalgam of cheese and meat and grease and bread and salt and melting awesomeness. From freshman year to graduation, you can eat these things twice a week and it will hurt you, but not badly - that is the magic of youth and appetite and America combined. After that, such a sandwich must be counted a special treat, and adapted to adult use. For this cheese steak sandwich, a version of the Screaming Eagle served in the dining halls of Boston College, the Jesuit university in Chestnut Hill, Mass., I made two essential changes: I used Cheddar in place of the usual white American the college uses; and I replaced the thin-shaved steak that is a hallmark of cheese steaks the world over with skirt steak. Doing so recalled Corinthians. When you are a child, American cheese and shaved steak can count as ambrosia. As an adult, it's kind of nasty. But skirt steak? Melting Cheddar? That is actually ambrosial. The fiery mayonnaise does the rest.

Steps:

  • To make chipotle mayonnaise: Combine mayonnaise and minced peppers in a small bowl and stir well. (Leftover sauce may be covered and stored safely in the refrigerator for weeks.)
  • To make toppings for sandwich: Heat a griddle or a large, heavy frying pan, ideally cast iron, over medium heat. Add oil to pan and, when it begins to shimmer, add the onion and peppers and stir to combine. Cook, stirring every so often, until they begin to soften and brown, approximately 15 to 20 minutes. Season to taste with salt and pepper, remove and set aside. Wipe pan, add butter and repeat process with mushrooms. Place steaks on griddle, working in batches if necessary, and cook for 3 minutes each side, until well browned but very rare. Remove to a serving platter and allow to rest.
  • To make sandwiches: Preheat oven to 200 degrees. When steaks are complete, slice them against the grain as thinly as possible. Place sub rolls in oven to warm. Return sliced steaks to griddle or frying pan, over medium heat, and add onions, peppers and mushrooms. Stir to combine, turn heat to low and cover with sliced cheese. Using tongs and a wide spatula, stir and pull to combine as cheese melts, approximately 3 minutes.
  • To serve: Remove rolls from oven and spread chipotle mayonnaise on the interior of each serving. Fill each sub with a mixture of meat, vegetables and cheese. Serve immediately.

1 bakery sub rolls or 1 hoagie roll
1 tablespoon red wine and vinegar salad dressing (or bottled italian dressing)
1 tablespoon mayonnaise
shredded lettuce
sliced tomatoes
sliced onion
2 tablespoons roasted red peppers, from a jar,chopped or sliced
4 slices capicola (an italian spiced ham you can get in almost any supermarket deli now)
3 slices regular ham
4 slices salami
4 slices sandwich pepperoni (you can get this at the supermarket deli)
3 -4 slices of your favorite cheese (on this sub, I like provolone best)

Steps:

  • Slice sub rolls all the way through& sprinkle each inside half with oil& vinegar mixture (or bottled italian dressing).
  • Spread a little mayo on top of that& add your lettuce, tomato& onion& roasted peppers on the bottom half.
  • Layer your meats on top of each other (fold each slice to fit on the roll) and top with cheese.
  • Eat cold or put in 450° oven on a cookie sheet until cheese melts& rolls are lightly browned.

SPICY ROAST BEEF AND CAPICOLA SUB SANDWICH

1 tablespoon extra-virgin olive oil
12 ounces thinly sliced deli roast beef, cut into strips
6 ounces thinly sliced hot capicola ham, cut into strips
1 sweet onion, sliced 1/4 inch thick
1 red bell pepper, seeded and sliced into 1/2-inch-wide pieces
1 yellow bell pepper, seeded and sliced into 1/2-inch-wide pieces
2 tablespoons tomato paste
2 tablespoons brine from a jar of hot pickled cherry peppers, plus 3 peppers seeded and chopped
Four 8-inch sub rolls, split and lightly toasted
4 ounces thinly sliced provolone

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat 1 1/2 teaspoons of the olive oil in a large skillet over medium-high heat. Add the beef and capicola, and cook, stirring, until just beginning to crisp on the edges, about 3 minutes; transfer to a plate with a slotted spoon. Add the remaining 1 1/2 teaspoons olive oil, onions and bell peppers and cook, stirring, until crisp-tender, about 5 minutes.
  • Scoot the vegetables to the side of the pan. Add the tomato paste to the open space and toast, stirring for a minute, and then combine with the vegetables. Add the cherry pepper brine and 1/2 cup water, bring to a simmer and return the meat to the pan. Simmer just until the sauce coats the meat and vegetables, about 1 minute.
  • Divide the meat and vegetables among the rolls. Top with the cherry peppers and provolone. Bake on a baking sheet until the cheese is melted and bubbly, about 2 minutes.

I found this recipe when I was looking for this recipe or one close to it. I tried this at Subway and really liked it. Subway always uses light Mayo. In this recipe the salt and pepper are optional. Use more or less mayo to suit your own taste and the same with the fruits. I like to add a few more fruits. There is no cook time unless you are cooking your chicken for this recipe. I use left over or canned.
