This recipe was shared with me by a special friend in Atlanta, GA. It has long been a favorite, and everyone who tastes it says it is the best they have ever had.

- Boil sweet potato whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potato, and remove the skin.
- Break apart sweet potato in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust.
- Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until knife inserted in center comes out clean. Pie will puff up like a souffle, and then will sink down as it cools.

- Combine all ingredients in blender; blend well.
- Pour into greased (I use olive oil cooking spray) pie pan.
- Bake at 350°F for 25 to 30 minutes.
SUGAR-FREE SWEET POTATO CASSEROLE
Steps:
- Poke the sweet potatoes/yams several times with a sharp knife and roast at 400 degrees F until soft - about 45-60 minutes.
- To make the topping, pulse 1 cup of the pecans in food processor or blender until it is ground into a meal. Add about 1/4 cup worth of sugar substitute, 1 teaspoon cinnamon, a pinch of salt, and 2 tablespoons of the butter and process until blended. Mix the rest of the pecans pieces in by hand. Set aside.
- Let the sweet potatoes cool for 10-15 minutes. Split them and remove the pulp. Put them into the food processor or blender (no need to wash between topping and sweet potatoes.) and process with the rest of the butter. Mashing with a potato masher is also fine, but the texture will be somewhat smoother if you blend/process. Add the rest of the seasonings. The amount of sweetener you add will be up to your taste and the sweetness of the sweet potatoes. When the seasonings are to your taste, add the egg and blend.
- Put the sweet potato in a buttered baking dish and sprinkle pecan topping over the top. Bake at 375 degrees F until the top is browned.

- Preheat oven to 350. Put all the ingredients in a bowl. Mix with beater. Pour in pie crust and bake 35-45 minutes. Use the toothpick method to check doneness. Take out and let cool completely. Put a layer of Sugar Free Cool Whip over it before serving.
- NOTE: USE ONLY FRESH SWEET POTATOES, not canned. Canned usually has sugar in them. To cook sweet potatoes, peel 5 medium potatoes and place all of them in large zip lock bag. Cook in microwave with bag sealed for 7-8 minutes on high. Bag will expand but it won't explode. Poke potatoes with fork to check tenderness. Mash with beater immmediately but let cool before putting in the recipe.
