I love melons, especially Cantaloupes. I was so pleased to find this recipe, which enables me to use the seeds instead of throwing them out. How wonderful is this, I get to make Agua Fresca or Horchata with the flesh and this lovely subtle drink with the seeds. It's all good. Hope you will enjoy it too. It tastes best the day...

seeds from 1 medium cantaloupe (about ½ cup)
¼ tsp. vanilla extract
pinch of salt
honey, to taste
4 cups water, divided into two portions

Steps:

  • 1. In a blender, grind the melon seeds with 2 cups of water until as smooth as possible, then pour the mixture through a strainer into a large pitcher.
  • 2. Put the seed bits back into the blender and mix with the last 2 cups water, vanilla, salt and honey, to your preference.
  • 3. Now strain this mixture into a pitcher, stir well, add more honey if necessary.
  • 4. Put beverage in fridge to chill. When ready serve over ice and enjoy.

1 cantaloupe, halved and seeded
½ cup white sugar, or more to taste
2 cups milk
6 cups cold water, or more as needed

Steps:

  • Shred the cantaloupe into a large pitcher using a fork, making sure to catch all the juice and pulp. Stir in the sugar, mashing any large pieces of cantaloupe. Stir in the milk and water, adding enough to fill the pitcher. Serve cold.

1 cup melon seeds
1 cup sugar or 1 cup equal amount Splenda sugar substitute
1 lime, rind of, grated
6 cups water

Steps:

  • Place the melon seeds in a blender and pulverize as finely as possible.
  • Combine the pulp, sugar, lime rinds and water in a large jug or bowl.
  • Let sit for 4 hours.
  • Strain through a cloth extracting all liquid possible.
