SUMMER ANYTIME CRISP CORN SALAD

Summer Anytime Crisp Corn Salad image

This quick and easy salad is so tasty as a replacement for other salads at picnics, pitch-ins, and barbecues. No mayo to spoil, and goes together in a snap. I've left out the tomato and it's still great. In winter, I make this with hamburgers to remind us summer is not far away. I use super-sweet, sweet yellow and white, or Summer Crisp corn. If you use fresh sweet corn, be sure to blanch it first and then give it a bath in ice water to keep it crispy. Tasty ! Easily doubled -- this batch makes just enough for my husband and I.

2 small young zucchini (about 1/2 pound), diced

1 clove garlic, minced
1/2 cup extra virgin olive oil
2 tablespoons lime juice

Tips:

  • Use fresh, sweet corn for the best flavor. If you don't have fresh corn, you can use frozen or canned corn, but the flavor won't be as good.
  • If you're using fresh corn, remove the kernels from the cob by cutting them off with a sharp knife. You can also use a corn stripper to remove the kernels.
  • Be sure to cook the corn before adding it to the salad. Boiling, steaming, or grilling are all good options.
  • Let the corn cool completely before adding it to the salad. This will help to prevent the salad from becoming watery.
  • Add your favorite vegetables, herbs, and spices to the salad to create a unique flavor. Some good options include tomatoes, cucumber, bell peppers, cilantro, and chili powder.
  • Dress the salad with a light vinaigrette or oil and vinegar dressing. You can also use a store-bought dressing, but be sure to choose one that is light and flavorful.
  • Serve the salad immediately or chill it for later. Corn salad is a great side dish for grilled chicken, fish, or steak.

Conclusion:

Summer corn salad is a refreshing and flavorful dish that is perfect for summer gatherings. It's easy to make and can be customized to your liking. So next time you're looking for a light and healthy side dish, give corn salad a try.
