EASY SHAKSHUKA RECIPE
Steps:
- Heat 3 tbsp olive oil in a large cast iron skillet. Add the onions, green peppers, garlic, spices, pinch salt and pepper. Cook, stirring occasionally, until the vegetables have softened, about 5 minutes.
- Add the tomatoes and tomato sauce. Cover and let simmer for about 15 minutes. Uncover and cook a bit longer to allow the mixture to reduce and thicken. Taste and adjust the seasoning to your liking.
- Using a wooden spoon, make 6 indentations, or "wells," in the tomato mixture (make sure the indentations are spaced out). Gently crack an egg into each indention.
- Reduce the heat, cover the skillet, and cook on low until the egg whites are set.
- Uncover and add the fresh parsley and mint. You can add more black pepper or crushed red pepper, if you like. Serve with warm pita, challah, or crusty bread of your choice.

Time 32m
Yield 5-6 cups, 4-6 serving(s)
Number Of Ingredients 5
Steps:
- Mise en place:.
- Open the can of artichokes and drain, reserving the brine in a small bowl. Squeeze the artichokes to remove any excess moisture. Quarter the artichokes and set aside. Open the jar of sun-dried tomatoes and drain oil into separate bowl. Cut the tomatoes into strips and set aside. Spread potatoes out onto a baking sheet and pat them dry with a paper towel (this will ensure that they will get nice and crispy).
- Directions:.
- 1) Heat reserved sun-dried tomato oil in a large nonstick skillet over medium heat.
- 2) Add Diced Potatoes with Onions and sautee in oil until crispy, about 15-20 minutes.
- 3) While the potatoes are cooking, make the aoili. Measure out mayonnaise and pesto. Mix together with 1 tablespoon of reserved artichoke brine until smooth. The aoili should be the consistency of a creamy salad dressing. You can add more of the reserved brine to thin out the aoili to desired consistency.
- 4) When the potatoes are crispy on the outside and fluffy on the inside, add the sliced sun-dried tomatoes and quartered artichoke hearts. Sautee for 1 or 2 more minutes until heated through.
- To serve:.
- Divide the artichoke hash into 4-6 individual portions and drizzle a small amount of the aoili over each portion. Serve immediately. If serving family style, leave aoili on the side with a serving spoon.

Steps:
- Heat the oven to 200C/180C fan/gas 6. Arrange the tomatoes cut-side down in a roasting tin, drizzle with some olive oil and season. Roast for 20 mins. Set aside to cool.
- Meanwhile, cook the onions in a medium ovenproof frying pan with the 2 tsp olive oil over a medium heat until they start to caramelise, about 8 mins.
- Once the onions have softened, add the peppers and season with salt, pepper and the pul biber. Peel the skins from the roasted tomatoes, then add these to the pan of onions and peppers along with all the resting juices.
- Crush the tomatoes roughly with a wooden spoon and cook for 5 mins over a medium-high heat. Add the wild garlic or spinach and wilt for a minute, then remove from the heat. Tuck the bread pieces in amongst the mixture, then create three gaps for the eggs using the spoon. Crack the eggs into the gaps, crumble over the feta and grate over the halloumi. Drizzle with some extra olive oil and sprinkle with a pinch of pul biber.
- Turn the oven down to 160C/140C fan/gas 3 and bake the shakshuka for 12-15 mins. The eggs should be cooked but runny in the middle, and the feta, halloumi and bread should be crisp and golden.

Tips:
- Start with high-quality ingredients: Fresh, ripe vegetables, flavorful herbs, and good-quality spices will make all the difference in your shakshuka ragu.
- Use a variety of vegetables: Don't be afraid to experiment with different vegetables in your shakshuka ragu. Some good options include bell peppers, zucchini, eggplant, and mushrooms.
- Cook the vegetables until they are tender: You want the vegetables in your shakshuka ragu to be cooked through but still retain some of their texture. Overcooking them will make them mushy.
- Use a good-quality tomato sauce: The tomato sauce is the base of your shakshuka ragu, so it's important to use a good one. Look for a sauce that is made with fresh tomatoes and has a rich, flavorful taste.
- Add the eggs carefully: Once the tomato sauce is simmering, carefully crack the eggs into the pan. Try to keep the yolks intact. You don't want to scramble the eggs.
- Cook the eggs until they are set: The eggs should be cooked until they are set but still have a slightly runny yolk. Overcooking them will make them rubbery.
- Garnish with fresh herbs: Once the shakshuka ragu is cooked, garnish it with fresh herbs such as basil, parsley, or cilantro. This will add a pop of color and flavor to the dish.
Conclusion:
Shakshuka ragu is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a quick and easy meal, give shakshuka ragu a try. You won't be disappointed.
