3/4 cup yellow cornmeal
2 tablespoons sugar
1 teaspoon baking powder
1 teaspoon salt
1 large egg
2/3 cup buttermilk

1 cup whole kernel corn

  • In a large bowl, combine the flour, cornmeal, sugar, baking powder and salt. In a small bowl, whisk the egg, buttermilk and oil. Stir into dry ingredients just until moistened. 2 cups yellow cornmeal, divided
1 cup buttermilk
2 large eggs
8 tablespoons melted butter

  • Adjust oven rack to middle position and heat oven to 450 degrees. Put a 12-cup muffin tin (with standard-sized molds of 12-cup capacity) in oven to heat while preparing batter.

1 cup stone-ground cornmeal
1 cup all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1 teaspoon ground cinnamon
3/4 teaspoon fine salt

2/3 cup plain yogurt or sour cream
1/2 cup smooth applesauce
1/2 cup molasses
1/2 teaspoon finely grated orange zest
2 large eggs
1 stick unsalted butter, melted (8 tablespoons)
1/4 to 1/3 cup toasted oats for sprinkling, optional
