This is an adaptation of several recipes I found in some old church cookbooks. Most called for pasta, this one does not and is not missed according to my high carb eating husband. Look for pizza sauce that has no added sugars and one that is lowest in carb counts.

Number Of Ingredients 14

1 lb ground beef
1 lb sausage
Italian spices
3 garlic cloves, pressed
1 cup onion, chopped
1 cup green pepper, chopped
1 cup red bell pepper, chopped
8 ounces mushrooms, sliced
3 ounces thin sliced pepperoni, cut into quarters (save some for top of casserole)
15 ounces pizza sauce
7 ounces black olives, sliced
2 cups mozzarella cheese, shredded
1 cup cheddar cheese, shredded
1/4 cup parmesan cheese, shredded

Steps:

  • Brown meats with Italian Seasonings and drain off fat. Add onions, peppers, garlic and mushrooms and saute until tender. Remove from heat and add pizza sauce and most of the pepperoni, mix well.
  • Spray a 13X9 Pyrex baking dish with Pam, add meat mixture. Top with most of the black olives. Mix mozzarella and cheddar together and spead over the black olives. Sprinkle with parmesan and decorate the top with the remaining pepperoni and black olives.
  • Bake 425 degrees for 15-20 minutes. Let rest 10 minutes, cut and serve.

8 ounces uncooked fettuccine
2 pounds ground beef
1 medium onion, chopped
2 cans (8 ounces each) mushroom stems and pieces, drained
1 can (15 ounces) tomato sauce
1 jar (14 ounces) pizza sauce
1 can (6 ounces) tomato paste
1/2 teaspoon sugar
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
4 cups shredded part-skim mozzarella cheese, divided
1 package (3-1/2 ounces) sliced pepperoni
1/2 cup grated Parmesan cheese

Steps:

  • Cook fettuccine according to package directions. Meanwhile, in a Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the mushrooms, tomato sauce, pizza sauce, tomato paste, sugar and seasonings. Drain pasta; stir into meat sauce., Divide half of the mixture between two greased 2-qt. baking dishes; sprinkle each with 1 cup mozzarella cheese. Repeat layers. Top each with pepperoni and Parmesan cheese. , Cover and bake at 350° for 20 minutes. Uncover; bake 10-15 minutes longer or until heated through.

6 ounces fettuccine
2 lbs hamburger
1 medium onion, chopped
2 (8 ounce) cans canned mushroom slices
15 ounces tomato sauce
1 (14 ounce) jar pizza sauce
6 ounces tomato paste
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
4 cups mozzarella cheese, shredded
3 1/2 ounces pepperoni, sliced
1/2 cup parmesan cheese, grated

Steps:

  • cook pasta per box instruction.
  • cook hamburger and onion in skillet until done, and drain.
  • stir in mushrooms, pizza sauce, tomato sauce, tomato paste, and seasonings. mix.
  • stir in drained pasta and mix.
  • put in 9 x 13 casserole dish.
  • top with pepperoni and cheeses.
  • cover and bake at 350 for 20 minutes.
  • uncover and bake 10-15 minutes or until hot and bubbly.

3 tablespoons extra-virgin olive oil, plus more for brushing
1 3/4 cups grated Parmesan
2 pounds large square cheese ravioli
2 large eggs, beaten
1 1/2 cups pizza sauce
2 cups grated low-moisture mozzarella
1 cup cooked, crumbled Italian sausage
3/4 cup sliced pepperoni
1 red bell pepper, diced
8 white button mushrooms, thinly sliced
1/4 red onion, thinly sliced
2 ounces sliced deli ham, chopped
1 cup fresh basil, shredded

Steps:

  • Move an oven rack to the bottom position and preheat to 425 degrees F. Bring a large pot of salted water to boil for the pasta. Brush a rimmed half-sheet pan with olive oil and coat the bottom and sides with 1/2 cup grated Parmesan.
  • Cook the ravioli until al dente, 1 to 2 minutes less than the package cooking time. Drain and pat dry.
