SWEET AND SOUR COLE SLAW

Sweet and Sour Cole Slaw image

Ever since she was a child, Maribeth couldn't stand the sight of mayonaisse, and mommy went to great lengths to hide it in recipes where it was required - but there was simply no hiding it in cole slaw. So she turned to a local cookbook at the time - the old River Road Recipes II - A second Helping - put out by the Junior League of Baton Rouge, Louisiana. Here is a GREAT tasting, non-creamy cole slaw - particuarily good with barbequed chicken. Notice that this recipe is made the night before - and also, as it contains no eggs or dairy, it would be perfectly safe for travel on picnics. This recipe is credited to Mrs. Ben Miller, Jr.

Yield Makes about 5 cups

Number Of Ingredients 10

1 pound (about half a medium head) green cabbage, finely shredded
Salt and freshly ground pepper
1/2 small red onion, finely chopped
1 tablespoon honey
2 tablespoons rice-wine vinegar
2 tablespoons olive oil
1 teaspoon mustard
2 teaspoons minced fresh tarragon leaves
1 large Granny Smith apple, peeled, cored, and cut into 1/4-inch pieces
1 medium head fennel, thinly sliced (about 2 1/2 cups)

Steps:

  • Toss cabbage and 1 teaspoon salt in a colander or large mesh strainer set over a medium bowl. Let stand until cabbage wilts, 1 to 4 hours. Rinse cabbage under cold running water (or in large bowl of ice water if serving slaw immediately). Press, but do not squeeze, to drain; pat dry with paper towels. (Cabbage can be stored in a resealable plastic bag and refrigerated overnight.)
  • Stir together onion, honey, vinegar, oil, mustard, and tarragon in a medium bowl; set dressing aside. Immediately toss cabbage, apple, and fennel in dressing. Season to taste with salt and pepper. Cover, and refrigerate until ready to serve.

SWEET AND SOUR COLE SLAW

Categories     Vegetable

Yield 6 servings

Number Of Ingredients 11

1/2 to 3/4 green cabbage, thinly sliced
1 red pepper, seeded and thinly sliced
2 carrots, grated
Dressing:
1 teaspoon dry mustard powder
1 to 1 1/2 teaspoons salt
1/4 teaspoon ground pepper
1/3 cup cider vinegar
1/3 cup olive oil
1/3 cup sugar
1/2 teaspoon celery seeds or cumin seeds, toasted and ground

Steps:

  • 1. Combine cabbage, red pepper and carrots in large bowl. Mix well 2. Combine all dressing ingredients, except vinegar and oil, in a small saucepan. Gradually whisk in vinegar and oil to avoid lumps. 3. Bring to a boil over high heat and cook for one minute. 4. Pour hot dressing over slaw and toss well. Cover and refrigerate.

Tips:

  • Choose the right cabbage: Green cabbage is the most common type used for coleslaw, but you can also use red or Napa cabbage. If using green cabbage, choose a head that is firm and heavy for its size. Red and Napa cabbage are more tender, so you may need to use less dressing.
  • Shred the cabbage finely: This will help the dressing to coat the cabbage evenly. You can use a food processor fitted with the shredding disc or a sharp knife to shred the cabbage.
  • Use fresh, crisp vegetables: The carrots, celery, and onion should all be fresh and crisp. This will give the coleslaw a better flavor and texture.
  • Make the dressing ahead of time: This will allow the flavors to meld together. You can make the dressing up to 24 hours in advance.
  • Chill the coleslaw before serving: This will help the flavors to develop and will make the coleslaw more refreshing.

Conclusion:

Sweet and sour coleslaw is a delicious and versatile side dish that can be enjoyed with a variety of meals. It is easy to make and can be tailored to your own taste preferences. Whether you like it sweet, sour, or somewhere in between, there is a sweet and sour coleslaw recipe out there for you.
