Time 1h45m

Yield 24

Number Of Ingredients 6

1 pound medium-hot red chile peppers, such as Fresnos or red jalapenos
2 small red or orange bell peppers - stemmed, seeded, ribs removed
½ large onion, peeled and quartered
1 ¼ cups white sugar
¾ cup apple cider vinegar
1 ½ teaspoons pickling salt

Provided by Chef Roly-Poly

Categories     Chutneys

Time 15m

Yield 1 Quart Relish

Number Of Ingredients 2

28 ounces pickled jalapeno peppers
granulated sugar

Steps:

  • Drain off peppers. Grind peppers in a food processor until consistancy of relish and place in a quart jar. Replace vinegar with sugar. Rotate jar every few hours until all sugar becomes liquid. Store in refrigerator and wait a few days and enjoy. Great on hotdogs. It will last almost forever in the frige, unless you're like me and can't resist.

Tips:

  • Choose the right pineapple: Use fresh pineapple for the best flavor. Look for a pineapple that is heavy for its size and has a golden yellow color.
  • Use fresh jalapeños: Fresh jalapeños will give the relish a more vibrant flavor than dried or canned jalapeños.
  • Wear gloves when working with jalapeños: Jalapeños can irritate your skin, so it's best to wear gloves when handling them.
  • Remove the seeds from the jalapeños if you want a milder relish: The seeds are the hottest part of the jalapeño, so removing them will reduce the heat of the relish.
  • Use a food processor to chop the ingredients: A food processor will make quick work of chopping the pineapple, jalapeños, and onion. You can also chop the ingredients by hand, but it will take longer.
  • Taste the relish before serving and adjust the seasonings as needed: Add more sugar if you want it sweeter, more vinegar if you want it tangier, or more jalapeños if you want it spicier.

Conclusion:

Sweet and spicy pineapple jalapeño relish is a delicious and versatile condiment that can be used in a variety of dishes. It's perfect for topping tacos, burritos, and nachos. It can also be used as a dipping sauce for chicken, fish, or shrimp. And it's also great as a spread for sandwiches and wraps.
