SWEET BAKED CORN
This recipe was given to me by a neighbor, Pat Dunaway when we lived in Colorado many years ago. Whenever we had a cul-de-sac BBQ, which was several times a year, she didn't dare come without bringing it. It was loved by all. It is very simple to make.

SWEET BAKED CORN PUDDING
As usual, this recipe came my newest "Taste of Home" magazine (Dec/Jan 05). The description read that it's a comforting side dish and spoons up as sweet and creamy as custard. I honestly never, ever thought that this would be something I or my family would like. However, I took one look at the picture that was posted in the magazine of this corn pudding and I was hooked. So, today (Christmas Day!) I made this Sweet Baked corn Pudding, and it was a WINNER! My husband and I just delighted in every bite. However, at first my sons were a little hesitant to try it, because it was something new. I said, "All I ask if that you take one bite, that's it, please!" So, they did, and they said that they NEVER want just regular corn again. It was that good! I hope you enjoy it too! tree luee dee

BAKED SWEET CORN CROQUETTES
These delicious corn croquettes are baked like muffins instead of fried. They can be served with butter, but my family prefers salsa as an accompaniment. -Karen Kuebler, Dallas, Texas

BUTTERY SWEET BAKED CARAMEL CORN (EASY)
This is the second type of caramel corn that we make. I had posted the Butter Toffee Popcorn Recipe, (link in comments section) and wanted to include this caramel corn version as well. Always the very first to sell out at school fund-raisers and bake sales when individually bagged. Also made in our family for over 40 years, I...

Steps:
- 1. Preheat oven to 250 degrees. Coat the bottom and sides of large roasting pan with butter flavored cooking spray. Place popped popcorn and nuts, if using, in roaster.
- 2. In medium heavy pan, slowly melt butter. Add brown sugar, corn syrup and salt. Gently heat to a low boil, stirring constantly. Boil on lowest heat possible without stirring for 5 minutes. Remove from heat.
- 3. Stir in baking soda and vanilla. Gradually, pour over popcorn and nuts, coating evenly. Bake for 1 hour, stirring every 15 minutes. Remove from oven and cool completely on lightly sprayed or non-stick foil. Store tightly in ziplock bags
Tips:
- Choose Sweet Corn: Select fresh, plump ears of corn with bright green husks and tight kernels. Avoid ears with brown or damaged kernels.
- Prepare the Corn: Remove the husks and silk from the corn. For best results, use a sharp knife to cut the kernels off the cob, rather than using a corn stripper.
- Use Fresh Ingredients: Fresh ingredients will give your cornbread the best flavor and texture. Use real butter, milk, and eggs, and avoid using margarine or shortening.
- Don't Overmix the Batter: Overmixing the batter will result in a tough, dense cornbread. Mix just until the ingredients are combined.
- Use a Hot Oven: Preheat your oven to the temperature specified in the recipe before baking the cornbread. This will help the cornbread rise and brown properly.
- Don't Overbake: Cornbread is done when a toothpick inserted into the center comes out clean. Overbaking will dry out the cornbread.
- Let the Cornbread Cool: Allow the cornbread to cool for a few minutes before serving. This will help it to set and firm up.
