12 green tomatoes
1 head cabbage
7 medium white onions
12 green bell peppers
6 red bell peppers
1/2 cup salt
6 cups sugar
1 tablespoon celery seed
2 tablespoons mustard seeds
1 1/2 teaspoons turmeric
4 cups pure apple cider vinegar
2 cups water

Steps:

  • Grind tomatoes, cabbage, onions, green peppers and red peppers into large pan.
  • Add salt and let stand overnight.
  • Rinse and drain.
  • Put into large kettle.
  • Add remaining ingredients, heat to boiling.
  • Boil for 8 minutes,stirring constantly.
  • Pour into hot sterilized jars; seal.
  • Let stand at least 2 weeks before opening.
  • For hot Chow-Chow, add 10 hot peppers and 1 tablespoon cayenne pepper.

1 gal chopped cabbage
12 medium chopped onions
6 medium sweet green peppers
6 medium sweet red peppers
salt to cover veggies
BRINE
1 gal vinegar
3 lb sugar
1/2 c dry mustard
6 Tbsp mustard seed
3 Tbsp celery seed
1 Tbsp cloves (in bag)

Steps:

  • 1. Put layer of vegetables in pan; sprinkle with salt, continue until all vegetables are used; cover last layer with salt; let stand overnight; then drain.
  • 2. Heat to boiling: Add brine to pot and all vegetables and cook slowly until tender, about 1/2 hr. Pack hot chow chow relish into hot jars, leaving 1/2-inch headspace. Remove air bubbles. Adjust the lids and process 10 minutes in a boiling-water canner.

2 quarts shredded cabbage (about one medium head). I use the same grater to shred the cabbage that I do to make slaw.
1/2 cup sweet onions chopped fine
1/2 cup chopped green or red bell peppers (optional)
2 Tablespoons salt
Combine chopped vegetables and sprinkle with salt. Let stand 4 to 6 hours in the refrigerator. Drain well.
Combine the following ingredients and simmer 10 minutes. Use a pot large enough to put the vegetable mix in later.
2 cups vinegar
1 1/2 cups sugar
2 teaspoons dry mustard
1 teaspoon turmeric
1/2 teaspoon ground ginger
2 teaspoons celery seeds
2 teaspoons mustard seed

Steps:

  • Add vegetables to vinegar-sugar-spice mixture and simmer another 10 minutes. Bring to a boil. Then pack, boiling hot, into clean, heated canning jars, leaving only a 1/8 inch head space. Place canning lids and rings on jars and tighten. I usually turn the jars upside down so that all the heat is on the seals. I don't turn them back upright until the jars are completely cool. This recipe doesn't have to sit before it's ready to eat. After it cools, you can start tasting it. You won't be able to tell where the cabbage starts and the onions end. The flavors blend together perfectly.
