4 tbsp lime juice (fresh squeezed (about 2 limes, include zest for extra lime flavor))

3 tablespoons lime juice (plus grated zest of 1 lime)

1 large russet potato, peeled and quartered
1 large sweet potato, peeled and quartered
1 cup corn
1 teaspoon prepared Dijon-style mustard
2 tablespoons fresh lime juice

3 tablespoons canola oil
½ teaspoon salt
¼ teaspoon ground black pepper
1 cucumber, halved lengthwise and chopped
