SWEETCORN PIE
A very tasty side dish, that kids of all ages adore. My nephew, who is 33 years old still asks me to make this dish whenever he sees me, after he tasted it for the first time when he was 11 years old! I think I found this recipe in a South African magazine, but I cannot remember as I have been making this for the past 30 years! ***I have updated the recipe - most of the cheese goes into the pie and a little is sprinkled over the top. I have also added microwave instructions for making white sauce

Tips:
- Prepare the corn. Fresh corn is best, but frozen or canned corn can also be used. If using fresh corn, remove the kernels from the cob. If using frozen corn, thaw it before using. If using canned corn, drain it and rinse it well.
- Use a variety of cheeses. A blend of cheeses will give your pie a more complex flavor. Some good options include cheddar, mozzarella, Parmesan, and Gruyère.
- Add some herbs and spices. Herbs and spices will help to enhance the flavor of your pie. Some good options include basil, oregano, thyme, garlic powder, and onion powder.
- Don't overcook the pie. The pie is done when the crust is golden brown and the filling is set. Overcooking the pie will make the crust tough and the filling dry.
- Serve the pie warm or at room temperature. Sweetcorn pie can be served warm or at room temperature. If you are serving it warm, let it cool for a few minutes before slicing. If you are serving it at room temperature, let it come to room temperature for at least 30 minutes before slicing.
Conclusion:
Sweetcorn pie is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is also a great way to use up leftover corn. With so many different variations, there is sure to be a sweetcorn pie recipe that everyone will enjoy. So next time you are looking for a new and exciting dish to try, give sweetcorn pie a try!
