SWISS VEGETABLE MEDLEY
Great dish when you are tired of the same old thing. I always get asked for the recipe if I bring it to a potluck. I usually use the frozen bag of mixed broccoli, cauliflower and carrots.

Another really good recipe from Mom. This one is delicious and easy to double. Remember to double baking time also though. I also like to add a little garlic powder and seasoned salt to mine. I also never add the pimiento, so leaving them out doesn't take away from the dish. Also a good one for those people that don't usually like veggies.

MY FAVORITE THANKSGIVING SIDE DISH - SWISS VEGETABLE MEDLEY
I think I may have gotten this recipe off the back of a bag of vegetables many years ago. I tried it and have kept it in my recipe collection ever since. It's so easy to put together and so flavorful. I hope you enjoy it.

SWISS VEGETABLE MEDLEY
If your looking for a change from the original green bean casserole for Holidays and Sunday dinner this is it. My Mom used to make this when we were having company for dinner and I made it when my boys were small. Cheese is always a good way to get your kids to eat their veggies.

Steps:
- 1. Combine vegetables and soup, 1/2 cup cheese, sour cream, pepper, pimento and 1/2 can of onions.
- 2. Pour into 1 quart casserole.
- 3. Bake covered at 350 degrees for 30 minutes.
- 4. Top with rest of cheese and onions and bake uncovered for 5 minutes.
Tips:
- Prep your vegetables in advance: Cut and wash your vegetables before you start cooking to save time and make the process easier.
- Use a variety of vegetables: The more colorful and diverse your vegetables, the more flavorful your medley will be. Don't be afraid to experiment with different types of vegetables, such as broccoli, cauliflower, carrots, zucchini, and bell peppers.
- Cook your vegetables in batches: If you're using a large amount of vegetables, cook them in batches to avoid overcrowding the pan and ensure even cooking.
- Season your vegetables well: Don't be shy with the seasonings! Salt, pepper, garlic, and herbs are all great ways to add flavor to your vegetables.
- Don't overcook your vegetables: Vegetables should be tender but still retain a slight crunch. Overcooked vegetables will lose their flavor and nutrients.
Conclusion:
A Swiss vegetable medley is a delicious and healthy side dish that can be enjoyed with a variety of main courses. It's a great way to get your daily dose of vegetables, and it's also a versatile dish that can be easily customized to your liking. So next time you're looking for a healthy and flavorful side dish, give Swiss vegetable medley a try!
