This Taco Lasagna is saucy, cheesy and delicious. Try this fun twist on your traditional lasagna with lots of Mexican flavors, yet still an easy weeknight and family-friendly meal.

1 pound ground beef
1 large onion (chopped)
1 green bell pepper (chopped)
7 ounce taco sauce (I used Club House (1 jar))
10 ounce enchilada sauce ((1 can))
15 ounce ricotta cheese
1 egg
2 1/2 cups cheddar cheese (I used Mexican blend)
9 lasagna noodles (no boil, (about half a package))
1/2 cup cherry tomatoes (chopped)
2 green onions (chopped)
2 tablespoon fresh cilantro (chopped)
1 avocado (sliced)

Steps:

  • Preheat oven to 375 F degrees.
  • Add the ground beef to a large skillet and brown it over medium-high heat until it's no longer pink, breaking it up as you go along.
  • Add the chopped onion and bell pepper to the skillet and let it cook for about 3 minutes, until the onion is translucent and the pepper is tender.
  • Stir in the taco sauce and enchilada sauce and bring to a boil. Remove from heat.
  • In another medium size bowl, whisk together the ricotta cheese, egg and 1/2 cup of the cheddar cheese.
  • Start layering the lasagna in a 9x13-inch baking dish. Start with a layer of 3 lasagna noodles, then add 1/2 of the meat sauce over the noodles. Next add 3 more lasagna noodles, then spread the ricotta mixture over the noodles. Add 3 more lasagna noodles, then the remaining meat sauce. Top with the remaining 2 cups of cheese.
  • Bake uncovered for 30 minutes or until the cheese melts and gets bubbly and the noodles are cooked through.
  • Let cool for about 10 minutes before slicing it then top with tomatoes, onions, cilantro and avocados.

1 pound ground beef sirloin
2 tablespoons chili powder
Kosher salt
Two 16-ounce jars salsa
1 pound no-boil lasagna noodles
Two 16-ounce packages part skim mozzarella, cut into 1/2-inch pieces
1/2 cup sour cream
1/2 small head iceberg lettuce, shredded
1 large beefsteak tomato, diced
1/2 cup shredded sharp Cheddar
1/2 cup crushed tortilla chips

Steps:

  • Position an oven rack in the middle of the oven and preheat the oven to 350 degrees F.
  • Heat the oil in a large skillet over medium-high heat until shimmering but not smoking. Add the ground beef and sprinkle with the chili powder and 1 teaspoon salt. Cook, breaking apart chunks of meat with the back of a spoon, and stirring often, until meat is crumbled and browned, 5 to 6 minutes. Stir in the salsa and 1 cup of water, bring to a simmer and cook until slightly reduced, about 4 minutes. Remove from the heat and set aside.
  • Spread a quarter of the meat sauce over the bottom of a 9- by 13-inch baking dish. Lay a third of the noodles over the sauce, overlapping slightly and breaking them to fit, if needed. Leave a 1/2-inch space around the edges of the baking dish. Top the noodles with another quarter of the meat sauce and a third of the mozzarella. Make another layer with a third of the noodles, a quarter of the meat sauce and a third of the mozzarella. Repeat, making a final layer with the remaining third of the pasta and quarter of the sauce, making sure that the top layer of noodles is completely covered in sauce. Top with the remaining third of the mozzarella.
  • Cover loosely with foil and bake until the cheese is melted and bubbling and the noodles are tender when pierced with a knife, about 1 hour. Remove the foil and cook 15 minutes more. Let rest 10 minutes. Dollop with sour cream and sprinkle with lettuce, tomato, Cheddar and chips.

2 (1.25 ounce) packages taco seasoning mix
4 cloves garlic, minced
½ teaspoon cayenne pepper
1 tablespoon chili powder
½ cup water
18 (6 inch) corn tortillas
1 (24 ounce) jar salsa
1 cup sliced green onion
1 (16 ounce) container sour cream
1 ½ cups shredded Cheddar cheese
1 ½ cups shredded Monterey Jack cheese

Steps:

  • Place ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, then season with taco seasoning, garlic, cayenne pepper, chili powder and water. Simmer for 10 minutes.

4 large egg whites

  • Preheat oven to 350°. Cook noodles according to package directions. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning. 1 small green bell pepper, diced
1 small yellow onion, diced
1 lb ground turkey
⅔ cup water
1 package McCormick® Original Taco Seasoning
1 can black beans, drained, and rinsed
1 cup frozen corn kernels, thawed
1 can fire roasted diced tomatoes, undrained
6 flour tortillas, 8 in (20 cm)
1 can refried beans
3 cups mexican cheese blend, shredded

Steps:

  • Preheat the oven to 350°F (180°C) and grease a 9 x 13-inch (22x33 cm) baking dish with cooking spray.
  • Heat the olive oil in a medium pan over medium-high heat. Add the green pepper and onion and sauté until soft and the onion is translucent, about 6 minutes.

1 (16 ounce) package lasagna noodles
2 lbs ground beef
1 cup onion, chopped
1/2 cup green pepper, chopped
2 (1 1/4 ounce) envelopes taco seasoning
1 cup water
4 cups taco sauce (2 16oz jars)
4 cups cheddar cheese (8oz)
2 cups monterey jack cheese
chopped lettuce
chopped tomato
sliced black olives

Steps:

  • Cook pasta and cool.
  • Cook meat, onion and green pepper.
  • Drain.
  • Stir in taco seasoning, water and sauce; heat to boiling.
  • Reduce heat- simmer 5 minutes.

1 (16 ounce) can refried beans
2 teaspoons dried oregano

12 dry lasagna noodles
2 ½ cups water
2 ½ cups salsa
2 cups sour cream
¾ cup chopped green onions
1 (2 ounce) can sliced black olives
1 cup shredded Pepper Jack cheese

  • In a large skillet, cook the ground beef over medium-high heat until evenly brown. Drain off excess fat. In a large bowl, combine the cooked beef, refried beans, oregano, cumin and garlic powder.

1 whole fresh red bell pepper, coarsely chopped
1/4 white onion

1 (1 1/4 ounce) package taco seasoning mix
12 cooked lasagna noodles
4 ounces shredded cheddar cheese (taco or Mexican style)

1 lb ground beef or 1 lb ground turkey
1/4 cup green onion
1/4 cup diced black olives
