Time 1h

Yield 4 appetisers, 4 serving(s)

Number Of Ingredients 12

4 tablespoons plain yogurt
1 piece ginger, peeled and finely grated (2 1/2 cm cube)
1 large garlic clove, peeled and mashed to a pulp
5 teaspoons lemon juice
1/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 1/2 teaspoons ground roasted cumin seeds
1/4 teaspoon garam masala
2 teaspoons yellow food coloring
1 teaspoon red food coloring
3/4 lb frozen peeled shrimp, defrosted and patted dry
4 tablespoons unsalted butter

Steps:

  • Put the yogurt in a bowl.
  • Beat lightly with a fork until it is smooth and creamy.
  • Add ginger, garlic, lemon juice, salt, black pepper, ground roasted cumin seeds, garam masala, and liquid yellow and red food colouring.
  • Stir to mix and set aside for 15 minutes.
  • Add the shrimp to the marinade and mix well.
  • Marinate for 30 minutes.
  • Remove the shrimp with a slotted spoon to a bowl, keeping the marinade.
  • Melt the butter in a frying pan over medium heat.
  • When the butter has melted completely, turn heat to medium high and immediately pour in the marinade.
  • Stir and fry for a few minutes or until the butter separates and you have a thick bubbly sauce clinging to the bottom of the pan.
  • Add the shrimp and fold in; cook for a few minutes, stirring gently.
  • Do not overcook the shrimp.
  • Serve immediately.

Tips:

  • Use fresh shrimp: Fresh shrimp is essential for this recipe. Frozen shrimp can be used, but it will not have the same flavor or texture as fresh shrimp.
  • Marinate the shrimp for at least 30 minutes: The marinade helps to flavor the shrimp and make it more tender. If you do not have time to marinate the shrimp for 30 minutes, you can still make the recipe, but the shrimp will not be as flavorful.
  • Cook the shrimp over high heat: High heat is necessary to sear the shrimp and give it a nice char. If you cook the shrimp over low heat, it will not brown properly and will be rubbery.
  • Do not overcook the shrimp: Shrimp cooks very quickly, so it is important to watch it carefully. Once the shrimp is pink and opaque, it is done. If you overcook the shrimp, it will become tough and chewy.
  • Serve the shrimp immediately: Tandoori shrimp is best served immediately after it is cooked. The shrimp can be served with rice, naan bread, or a salad.

Conclusion:

Tandoori shrimp is a delicious and easy-to-make dish that is perfect for a party or a weeknight meal. The shrimp is marinated in a yogurt-based marinade and then cooked in a tandoor oven. The result is a shrimp that is tender, juicy, and flavorful. If you do not have a tandoor oven, you can still make this recipe by cooking the shrimp in a hot oven or on a grill.
