ELAINE'S SWEET AND TANGY LOOSE BEEF BBQ

Elaine's Sweet and Tangy Loose Beef BBQ image

This recipe is a fly-by-the-seat-of-your-pants creation. I researched several BBQ recipes online and in my cookbooks and combined bits and pieces of different things I liked about them. The result was a wonderful and tangy loose BBQ for sandwiches that is very easy to make and takes little hands-on time. My in-laws who are in their 70s both said it was the best BBQ they had ever had. It was awesome!

Every year for our church ice cream social, we'd fill six roaster ovens with these ingredients and let them simmer all day. Boy, did that barbecue smell good. If you want a meal that's ready to eat in 30 minutes, but can keep on the stove for late arrivals, this is the one. -Janet Sipes, Monmouth, Illinois

TANGY BARBECUE SANDWICHES

Tangy Barbecue Sandwiches image

This is adapted from a crockpot cookbook I have. The original recipe contained water and cooked on high. We found that the meat is better cooked on low, and that the addition of the water makes it too soupy. We enjoy this on onion rolls from the bakery of our local grocery store. Sometimes we even spread the rolls with garlic butter and toast them under the broiler before loading with the meat. Great with Recipe #71203, #71203 or my Recipe #247747, #247747.

Time 8h10m

Yield 14-18 sandwiches, 14-18 serving(s)

Number Of Ingredients 13

3 cups celery, chopped (I dice this pretty fine, as I'm not a big fan of celery and don't want to find recognizeable chunks )
1 cup onion, chopped
1 cup ketchup
1 cup barbecue sauce
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar
1 teaspoon chili powder
1 teaspoon salt (I usually omit this)
1/2 teaspoon pepper
1/2 teaspoon garlic powder (I usually just throw in a healthy spoonful of the jarred minced garlic)
3 -4 lbs boneless chuck roast (trim any visible fat off first, to avoid having it liquified in your sandwich later)
14 -18 hamburger buns
pickle (optional)

Steps:

  • Combine all ingredients except roast, buns, and pickles in crock pot. Mix well.
  • Add roast. Roll the roast around to coat with the other ingredients.
  • Cover. Cook on Low 8-10 hours.
  • Remove roast. Cool enough to shred meat with two forks. Depending on the direction of the grain of the meat, you may want to cut into smaller pieces with a knife before shredding. The last time I made this, I had very long shreds of meat that didn't stay on the bun very well when I bit into it, because the grain ran weird on the roast, and I just shredded it anyway.
  • Return meat to sauce. Heat well.
  • Serve on buns with pickles, if desired.

Tips:

  • Choose the right cut of beef: Chuck roast, brisket, or flank steak are all great options for BBQ beef sandwiches. These cuts are flavorful and have a good amount of fat, which will help keep the meat moist during cooking.
  • Marinate the beef: Marinating the beef helps to tenderize it and add flavor. You can use a simple marinade made with olive oil, Worcestershire sauce, garlic, and spices, or you can get creative and try a more complex marinade.
  • Cook the beef slowly: Low and slow cooking is the best way to achieve tender, juicy BBQ beef. Cook the beef in a smoker or on a grill over indirect heat until it reaches an internal temperature of 200 degrees Fahrenheit.
  • Shred the beef: Once the beef is cooked, shred it with two forks or a meat shredder. This will make it easier to eat on a sandwich.
  • Make your own BBQ sauce: Homemade BBQ sauce is easy to make and tastes so much better than store-bought sauce. There are many different recipes available online, so you can find one that suits your taste.
  • Toast the buns: Toasted buns will help to keep the sandwiches from getting soggy. You can toast the buns in a toaster, on a grill, or in the oven.

Conclusion:

Tangy BBQ beef sandwiches are a delicious and easy-to-make meal that is perfect for any occasion. With a little planning and effort, you can make BBQ beef sandwiches that will impress your friends and family. So fire up the grill or smoker and get started today!
