2 seeded hamburger buns, split

1 teaspoon salt
1/2 teaspoon pepper
1/2 onion, sliced
2 cloves garlic, smashed
1 cup pickled peppers (such as a mixture of jalapeños and sweet cherry peppers)
1/3 cup pickled pepper liquid (again, a mixture is nice)
1/3 cup Progresso™ unsalted chicken broth (from 32-oz carton)
1 teaspoon dried oregano leaves
6 to 8 sandwich rolls, split
6 to 8 slices pepper Jack cheese

Steps:

  • Season pork with salt and pepper; place in slow cooker. Add onion, garlic, pickled peppers, pickled pepper liquid, chicken broth and oregano. Cover and cook on Low heat setting 6 hours.
  • Set oven control to broil. Toast split sandwich rolls with tops 4 to 6 inches from heat until golden.

I love how flexible this can be, based on your preferences and what you have in your fridge. I am going to use our favorite way first in the ingredients, but definitely feel free to sub your favorite meats and cheeses - we do that all the time! Also - I usually use the long, oval-shaped slices of meat that I get from my local deli, but I know that they also sell small circular slices in the deli section, so if you get those, you may need a couple more slices to have enough meat.

24 sturdy round crackers, i.e. Ritz
6 ounces monterey jack pepper cheese (cheddar, garlic and herb, swiss, or provolone are also delicious)
4 slices deli turkey or 4 slices salami, are great too
3 small plum tomatoes, cut into 8 thin slices each
2 tablespoons barbecue sauce or 2 tablespoons hot sauce
