Tips:

  • To achieve a crispy crust, ensure the chicken is completely dry before applying the tarragon mixture. Pat it thoroughly with paper towels to remove excess moisture.
  • For the best flavor, use fresh tarragon leaves. If fresh tarragon is unavailable, you can substitute dried tarragon, but use half the amount as it is more concentrated.
  • Don't overcrowd the pan when searing the chicken. This will prevent the chicken from cooking evenly and result in a soggy crust.
  • Use a meat thermometer to ensure the chicken is cooked to an internal temperature of 165°F (74°C). This will ensure that the chicken is cooked safely and is juicy and tender.
  • Let the chicken rest for a few minutes before slicing and serving. This will allow the juices to redistribute throughout the meat, resulting in a more flavorful and moist chicken.
