Time 2h30m

Yield 4 serving(s)

Number Of Ingredients 8

3 -4 lbs beef tri-tip roast
3 tablespoons tequila
2 tablespoons sesame oil
2 tablespoons Dijon mustard
1 tablespoon balsamic vinegar
2 minced garlic cloves
1 teaspoon salt
1 teaspoon black pepper

Steps:

  • Mix tequila, sesame oil, Dijon mustard, balsamic vinegar, garlic, salt, and pepper in a small bowl then place in a large zip-top bag with tri-tip. Marinate at least two hours before desired grilling time.
  • Grilling Method: Pre-heat gas grill to 400 degrees F. Place meat on grill top-side down for 4-5 minutes for nice grill marks. Flip over, reduce heat slightly and close lid,
  • To be prepared for flare-ups, keep an open beer by the grill and use as a 'fire extinguisher.' If no flare-ups occur, then enjoy the beer yourself!
  • Cook for 20-25 minutes or until meat thermometer inserted in center reads 135-140 degrees F. for medium. Slice thin and enjoy with the fire extinguisher beer or the liquid type of margarita of your choice.

Tips:

  • Choose a high-quality tri-tip roast. Look for one that is well-marbled and has a deep red color.
  • Prepare the marinade ahead of time to allow the flavors to meld. You can marinate the roast for up to 24 hours, but even a few hours will do.
  • When grilling the roast, cook it over indirect heat until it reaches an internal temperature of 135 degrees Fahrenheit for medium-rare, 145 degrees Fahrenheit for medium, or 155 degrees Fahrenheit for well-done.
  • Let the roast rest for 10-15 minutes before slicing and serving. This will help the juices redistribute throughout the meat.
  • Serve the tri-tip roast with your favorite sides, such as grilled vegetables, roasted potatoes, or a fresh salad.
