TERIYAKI & SESAME ROASTED MUSHROOMS

Yummy side dish, or I have used this as a main with the marinade thinned with water and heated as a sauce over some steamed asian greens with some rice. I have successfully made this without the oil, just spray the mushrooms with an oil spray prior to cooking. The sugar in the marinade will caremelise in the oven. Aussie measurements (1tbsp= 20mls).

Provided by Rachael Ray : Food Network

Time 25m

Yield 4 servings

Number Of Ingredients 10

Salt
1 pound whole wheat spaghetti
2 tablespoons high-temperature cooking oil
1 pound shiitake mushrooms, sliced
Coarse black pepper
1-inch piece peeled ginger, minced or grated
2 cloves garlic, minced
1 cup shelled edamame, defrosted
1 bunch scallions, thinly sliced on an angle
1/3 cup teriyaki sauce

Steps:

  • Heat a large pot of water to a boil, salt it, add the pasta and cook to al dente.
  • After you drop the pasta in the water, heat the oil over high heat in a skillet. When the oil smokes up, add the mushrooms and brown 3 to 4 minutes. Season with pepper, and then add the ginger, garlic, edamame and scallions. Stir fry 2 minutes more.
  • Drain the pasta, toss with the vegetables and dress with the teriyaki, to taste.

Tips:

  • Choose the right mushrooms. The best mushrooms for roasting are firm and have a meaty texture, such as portobello, shiitake, or cremini mushrooms.
  • Cut the mushrooms into uniform pieces. This will help them cook evenly.
  • Use a flavorful marinade. The marinade will help to infuse the mushrooms with flavor and keep them moist during roasting.
  • Roast the mushrooms at a high temperature. This will help to caramelize the mushrooms and give them a crispy exterior.
  • Keep the mushrooms in a single layer on the baking sheet. This will help them to cook evenly.
  • Roast the mushrooms until they are tender and slightly browned. Depending on the size of the mushrooms, this will take about 15-20 minutes.
  • Serve the mushrooms immediately. They can be enjoyed on their own or as a side dish.

Conclusion:

Teriyaki sesame roasted mushrooms are a delicious and easy-to-make side dish that can be enjoyed by people of all ages. They are perfect for a weeknight meal or a special occasion. With their sweet and savory flavor, these mushrooms are sure to be a hit. So next time you're looking for a healthy and flavorful side dish, give teriyaki sesame roasted mushrooms a try.
