1/2 cup white wine or chicken broth
2 tablespoons lemon juice
1 tablespoon grated lemon zest
1 tablespoon minced chives
1 tablespoon minced fresh parsley
1/2 teaspoon dried tarragon
Pepper to taste

Steps:

  • Place the fillets in an ungreased 11x7-in. microwave-safe dish. Cover and cook on high for 6 minutes; drain. 1 small onion, thinly sliced (almost 2/3 cup)
2 tablespoons water
8 ounces picante sauce
1 medium tomatoes, chopped (a little more than 2/3 cup)
1/2 cup sliced ripe olives
2 ounces cheddar cheese, shredded (1/2 cup)

Steps:

  • Thaw fish, if frozen.
  • Place sliced onion in a single layer in the bottom of an ungreased 12 x 7 1/2 x 2-inch microwave-safe baking dish.
  • Add water. Cover with vented clear plastic wrap.
  • Microwave on 100% power (HIGH) for 3-4 minutes or until onion is crisp-tender.
  • Place fish fillets on top of onion slices and cook, covered, for 4-5 minutes or until fish flakes easily when tested with a fork, giving the dish a half turn after 3 minutes.

4 center-cut boneless, skinless cod fillets (6 to 8 ounces each)
Kosher salt and freshly ground black pepper
1/2 cup Ritz cracker crumbs (15 crackers; see Cook's Note)
1/3 cup panko (Japanese bread flakes)
2 tablespoons minced fresh parsley
2 teaspoons minced garlic (2 cloves)
1 teaspoon grated lemon zest
3 tablespoons unsalted butter, melted
1/4 cup dry white wine, such as Pinot Grigio
2 tablespoons freshly squeezed lemon juice
Lemon wedges, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Pour 2 tablespoons olive oil in a 9 x 9-inch ceramic baking dish (it should be just big enough to hold the fish) and tilt the dish to coat the bottom with oil.
