6 center-cut bacon slices, chopped
1 medium yellow onion, finely chopped (about 1½ cups)
1 small red bell pepper, chopped (about 1 cup)
2 jalapeño chiles, seeded and finely chopped (about ⅓ cup)
3 large garlic cloves, finely chopped
½ cup dark lager beer (such as Modelo Negra)
5 (15-oz.) cans pinto beans, drained and rinsed
¾ cup barbecue sauce (such as Sweet Baby Ray's Original Barbecue Sauce)
¼ cup light brown sugar
1 tablespoon Worcestershire sauce
2 teaspoons chili powder
1 teaspoon kosher salt

Steps:

  • Preheat oven to 350°F. Cook bacon in a large skillet over medium, stirring occasionally, until crisp, 10 to 12 minutes. Transfer bacon to a paper towel-lined plate, reserving 2 tablespoons of the drippings in skillet; reserve remaining drippings for another use. Increase heat to medium-high. Add onion, bell pepper, jalapeños, and garlic; cook, stirring often, until tender, about 6 minutes.
  • Add beer, and bring to a simmer over medium-high. Simmer, stirring occasionally, until slightly reduced, about 3 minutes. Stir in beans, barbecue sauce, brown sugar, Worcestershire sauce, chili powder, and salt. Bring mixture to a simmer over medium-high. Remove from heat, and transfer mixture to a 2-quart baking dish. Cover with aluminum foil.
  • Bake in preheated oven 20 minutes. Remove foil, and continue to bake until bubbling around edges and hot, 15 to 20 minutes more. Top with cooked bacon crumbles.

1 1/2 cups ketchup

  • Fry the bacon crisp and then crumble. Put aside.

1 small yellow onion, diced
1 bell pepper, diced
1 clove garlic, minced
1 1/2 cups packed brown sugar
1 cup brewed coffee
1 tablespoon ketchup
2 teaspoons mustard
1 teaspoon chile paste, such as sriracha
Kosher salt and freshly ground black pepper
Two 16-ounce cans pinto beans, drained
1/2 cup sour cream
1/2 cup grated Cheddar
1/4 cup sliced green onions
Butter crackers, such as Ritz, or tortilla chips, for serving

Steps:

  • Heat a Dutch oven over medium heat; line a plate with a paper towel. Add the bacon to the pot and cook, stirring occasionally, until crisp, 5 to 7 minutes. With a slotted spoon, transfer the bacon to the lined plate to drain.
  • Discard most of the bacon fat, leaving about 2 tablespoons in the pot. Return to medium heat, add the onion, bell pepper and garlic and saute until beginning to brown, about 3 minutes. Add the brown sugar, coffee, ketchup, mustard, chile paste and 1 teaspoon each salt and pepper, then add the beans and stir to combine. Bring to a simmer, then cover and cook until the sauce has thickened, 12 to 15 minutes.
  • Remove the pot from the heat and stir in the sour cream. Taste and adjust the seasoning as needed. Transfer the dip to a serving bowl and garnish with the Cheddar, green onions and reserved bacon. Serve with crackers or chips alongside.

1 pound bacon
2 onions, cut into 1/4-inch dice
4 teaspoons chili powder
4 cloves garlic, minced
1 1/4 cups firmly packed light-brown sugar
2 12-ounce bottles dark beer
Salt and freshly ground black pepper

Steps:

  • In a stockpot or Dutch oven, cover beans with cold water by 6 inches. Soak 8 hours or overnight.
  • In a heavy skillet, cook bacon over medium heat until crisp. Remove bacon, and set aside.
  • Pour off all but 3 tablespoons fat. Add onions, chile powder, and garlic; saute stirring, until onions are soft, about 5 minutes.
  • Drain beans. Return to stockpot; cover with water by 2 inches. Crumble bacon into small pieces; add to beans with onion mixture, sugar, and beer.
