Time 50m

Yield 4 servings

Number Of Ingredients 13

4 tablespoons unsalted butter
1 medium yellow onion, diced
1 large carrot, diced
2 cloves garlic, minced
1/4 cup all-purpose flour
2 cups half and half
4 cups low-sodium chicken broth
4 cups broccoli florets (from about 1 head)
2 bay leaves
1/4 teaspoon freshly grated nutmeg
Kosher salt and freshly ground pepper
1 large russet potato (about 8 ounces)
8 ounces mild yellow Cheddar, shredded (about 2 cups), plus more for serving

Steps:

  • Melt the butter in a large saucepan or Dutch oven over medium-high heat. Add the onion, carrot and garlic and cook, stirring occasionally, until just tender, about 5 minutes. Whisk in the flour and cook until golden, 3 to 4 minutes, then gradually whisk in the half-and-half until smooth. Add the chicken broth, broccoli, bay leaves, nutmeg, 1/2 teaspoon salt and few grinds of black pepper Bring to a boil, then reduce to medium-low and simmer, uncovered and stirring occasionally, until the broth has thickened and the broccoli is very tender, about 15 minutes.
  • Meanwhile, prick the potato all over with a fork and put on a microwave-safe plate. Microwave on high until tender, flipping halfway through, about 6 minutes. Let cool, then peel. Use a fork or potato masher to mash until crumbly.
  • Reserve 2 cups of the soup in a liquid measuring cup and discard the bay leaves. Let the remaining hot soup cool for 5 minutes or so, then transfer it to a blender, filling no more than halfway. Add the mashed potato. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters, and pulse until very smooth.
  • Stir the pureed soup and reserved 2 cups of soup back into the pot. Whisk in the cheese until melted and smooth. Season with salt and pepper. Ladle into serving bowls and top with more shredded Cheddar.

Time 1h10m

Yield 4 servings

Number Of Ingredients 12

6 tablespoons unsalted butter
1 small onion, chopped
1/4 cup all-purpose flour
2 cups half-and-half
3 cups low-sodium chicken broth
2 bay leaves
1/4 teaspoon freshly grated nutmeg
Kosher salt and freshly ground pepper
4 7 -inch sourdough bread boules (round loaves)
4 cups broccoli florets (about 1 head)
1 large carrot, diced
2 1/2 cups (about 8 ounces) grated sharp white and yellow cheddar cheese, plus more for garnish

Steps:

  • Melt the butter in a large Dutch oven or pot over medium heat. Add the onion and cook until tender, about 5 minutes. Whisk in the flour and cook until golden, 3 to 4 minutes, then gradually whisk in the half-and-half until smooth. Add the chicken broth, bay leaves and nutmeg, then season with salt and pepper and bring to a simmer. Reduce the heat to medium-low and cook, uncovered, until thickened, about 20 minutes.
  • Meanwhile, prepare the bread bowls: Using a sharp knife, cut a circle into the top of each loaf, leaving a 1-inch border all around. Remove the bread top, then hollow out the middle with a fork or your fingers, leaving a thick bread shell.
  • Add the broccoli and carrot to the broth mixture and simmer until tender, about 20 minutes. Discard the bay leaves. Puree the soup in batches in a blender until smooth; you'll still have flecks of carrot and broccoli. Return to the pot. (Or puree the soup in the pot with an immersion blender.)
  • Add the cheese to the soup and whisk over medium heat until melted. Add up to 3/4 cup water if the soup is too thick. Ladle into the bread bowls and garnish with cheese.

CHICKEN, BROCCOLI, AND CHEDDAR CASSEROLE

Chicken, Broccoli, and Cheddar Casserole image

Super comfort food, but kinda healthy because it has broccoli in it, right? My grandmother passed this chicken and Cheddar recipe down and it is a family favorite. After the first time I made it, I went on a casserole kick and made it twice a week for 3 months straight! I typically serve this over rice, but it is just as great by itself. Last time I didn't make rice, but served it with bread.

THE BEST BROCCOLI CHEDDAR SOUP WITH CHICKEN

The Best Broccoli Cheddar Soup With Chicken image

This is delicious and lower-fat than most creamy soups as it has no cream in it. I have adapted it from a number of broccoli soups and added chicken (use pre cooked to save time) to make it a more complete meal. Perfect winter comfort food!

Categories     One Dish Meal

Time 4h15m

Yield 8 serving, 8 serving(s)

Number Of Ingredients 12

4 (8 ounce) cans low sodium chicken broth
1 (8 ounce) package reduced-fat cream cheese, softened
1/2 cup flour
8 tablespoons butter (I like smart balance) or 8 tablespoons butter, alternative (I like smart balance)
1 cup diced red onion
2 cups minced fresh broccoli
3 medium russet potatoes, peeled and cubed
2 cups shredded chicken
12 ounces cheddar cheese
2 teaspoons fresh garlic cloves
1 teaspoon crushed red pepper flakes (or to taste)
1 teaspoon black pepper

Steps:

  • Saute onion and garlic with 2 tbsp butter until onion is becoming translucent.
  • In another pan melt remaining butter and slowly add flour to create a roue.
  • Combine all ingredients in crock pot and simmer on high for 4 hours or until potatoes are tender.
  • You may need to stir often during first hour to ensure all ingredients are combined.
  • Top with additional cheddar cheese and green onions if you like!

Tips:

  • Use fresh broccoli: Fresh broccoli florets will give your soup the best flavor and texture. If you don't have fresh broccoli on hand, you can use frozen broccoli florets, but be sure to thaw them before using.
  • Shred your own cheddar cheese: Pre-shredded cheddar cheese often contains additives that can affect the taste and texture of your soup. Shredding your own cheddar cheese will give you the best results.
  • Don't overcook the broccoli: Overcooked broccoli will become mushy and lose its flavor. Cook the broccoli just until it is tender-crisp, about 5 minutes.
  • Use a good quality chicken broth: The chicken broth is the base of your soup, so it's important to use a good quality broth. Look for a broth that is low in sodium and has a rich flavor.
  • Add some spices: A little bit of spice can help to enhance the flavor of your soup. Try adding a teaspoon of garlic powder, onion powder, or paprika.
  • Serve with a crusty bread or crackers: Broccoli cheddar soup is the perfect comfort food on a cold day. Serve it with a crusty bread or crackers for dipping.

Conclusion:

Broccoli cheddar soup is a classic comfort food that is easy to make and always a hit with a crowd. With its creamy, cheesy texture and delicious flavor, it's the perfect soup for a cold day. The soup can be made ahead of time and refrigerated for up to 3 days, or frozen for up to 3 months. This makes it a great option for busy weeknights or for when you're entertaining guests.
