Yield Makes 1 cup

Number Of Ingredients 9

1/4 cup fresh lemon juice
1/2 teaspoon hot pepper flakes
1/2 teaspoon cracked black pepper
1/2 teaspoon coarse salt (kosher or sea), or to taste
4 strips of lemon zest
3 cloves garlic, crushed with the side of a cleaver or minced
1/4 cup coarsely chopped fresh parsley
1/4 cup coarsely chopped fresh basil, cilantro, dill, oregano, or a mix of all four
1/2 cup extra virgin olive oil

Steps:

  • Combine the lemon juice, hot pepper flakes, cracked pepper, and salt in a nonreactive (glass, ceramic, or stainless steel) bowl and whisk until the salt crystals are dissolved. Add the lemon zest, garlic, parsley and basil. Stir or whisk in the olive oil. The virtue of this marinade is its freshness: Use it within 1 to 2 hours of making. Stir again before using.

Tips for Creating the Best Marinade:

  • Choose the Right Acid: Acids, such as vinegar, lemon juice, or yogurt, help tenderize the meat and add flavor. Select an acid that complements the flavor profile of your dish.
  • Add Aromatics: Aromatics, such as garlic, onion, ginger, and herbs, infuse the marinade with flavor. Use fresh herbs for the best results.
  • Use Spices Wisely: Spices can add depth and complexity to the marinade. Start with a small amount and adjust to your taste.
  • Balance Sweetness and Saltiness: A touch of sweetness can balance the acidity of the marinade. Honey, brown sugar, or maple syrup are good options. Salt enhances the flavors and helps tenderize the meat.
  • Let the Marinade Do Its Magic: Allow the meat to marinate for at least 30 minutes, but preferably overnight. This allows the flavors to penetrate the meat.
  • Discard the Marinade: Before cooking, discard the marinade to avoid contaminating the cooked meat with any bacteria from the raw meat.

Conclusion:

Creating a flavorful and effective marinade is an art form that requires experimenting with different ingredients and techniques. By following these tips and experimenting with various flavor combinations, you can create marinades that tenderize, enhance, and elevate the taste of your grilled, roasted, or pan-fried dishes. Remember, the key to a great marinade lies in striking a balance between acidity, sweetness, saltiness, and aromatics. With practice, you'll be able to create marinades that transform ordinary meals into culinary masterpieces.
