MARINADE FOR GRILLED SALMON

Marinade for Grilled Salmon image

I read Derf's "Spiced Salmon" recipe (#137983) with interest since it also uses chutney as I do, but we prefer our salmon grilled w/the smoky, lime flavor of this marinade. I use the marinade all day & then reserve it to use for a sauce I make while my DH grills the salmon. We love this & the combination of the salmon & the marinade sauce has been a big hit with our friends.

Time 10m

Yield 4 serving(s)

Number Of Ingredients 11

4 (6 ounce) salmon fillets, 1 inch thick
1/4 cup olive oil
1/4 cup soy sauce
1/4 cup lime juice (may use lemon juice)
1/4 cup Worcestershire sauce
1/4 cup mango chutney
1/4 cup honey
2 garlic cloves, finely minced
1 teaspoon dill
reserved marinade
cream cheese

Steps:

  • Combine all marinade ingredients in large plastic bag, add salmon fillets & marinate for 6-8 hrs before grilling.
  • While salmon grills, transfer marinade to small saucepan by pressing through a sieve. This allows the bulk & flavors of the garlic & chutney to join the sauce without making it chunky.
  • Over low to medium heat only, add cream cheese & incorporate it into the sauce until you reach your desired consistency.

Tips for Grilling Salmon with Marinade:

  • Choose The Freshest Salmon: Opt for wild-caught salmon whenever possible. If using farmed salmon, look for fish raised without antibiotics and pesticides.
  • Marinade Time: Allow the salmon to marinate for at least 30 minutes, but no longer than 24 hours. Over-marinating can result in mushy fish.
  • Preheat Your Grill: Ensure your grill is preheated to medium-high heat before grilling the salmon. This will help sear the fish and prevent it from sticking.
  • Grill Time: Cook the salmon skin-side down for 5-7 minutes or until the fish is opaque and flakes easily with a fork.
  • Baste the Salmon: During the last few minutes of grilling, baste the salmon with the leftover marinade to keep it moist and flavorful.
  • Let It Rest: Once the salmon is cooked, let it rest for a few minutes before serving. This allows the juices to redistribute, resulting in a more succulent fish.

With its simple yet flavorful ingredients, this marinade is a versatile choice for grilled salmon. Whether you prefer a classic lemon-herb flavor or a spicy kick, this marinade has got you covered.
