3 eggs
1 cup Splenda sugar substitute
1 teaspoon vanilla
1 pint low-fat sour cream
1/4 cup Splenda sugar substitute

Steps:

  • Beat ingredients for'cake' until smooth.
  • Pour into a 9" greased square pan.
  • Bake at 350 degrees for 35 minutes.
  • Remove from oven for 15 minutes-- leave oven on.
  • Meanwhile-- mix topping ingredients together and mix well.
  • After the 15 minutes has elapsed, pour topping over the cheesecake and spread evenly, and bake for 10 minutes more.
  • Chill.

16 ounces low fat cottage cheese or 16 ounces ricotta cheese
8 ounces plain low-fat yogurt
4 eggs
granular sweetener equal to 1/2 cup sugar
1 1/2 teaspoons vanilla extract
1/4 teaspoon grated lemon rind (or to taste)
2 tablespoons lemon juice (or to taste)
cooking spray

Steps:

  • Preheat oven to 325°F.
  • Blend the cottage cheese for about a minute until perfectly smooth and free of lumps.
  • Add yogurt and blend another minute.
  • Add remaining ingredients and blend just to mix.
  • Correct seasoning.
  • Spray a 9 inch square pan with cooking spray.
  • Pour the batter into the pan.
  • Bake about 40 minutes or til set (insert a needle or small sharp knife that comes out clean).

2 (8 ounce) packages light cream cheese (not fat free)
1/2 cup Splenda granular
2/3 teaspoon vanilla extract
2 eggs
1/2 cup canned pumpkin puree (not pumpkin pie filling which contains sugar)
1/2 teaspoon ground cinnamon
1/2 teaspoon apple pie spice
whipped cream (optional)

Steps:

  • Preheat oven to 325°F.
  • In large bowl combine softened cream cheese, Splenda, and vanilla. Beat with electric mixer until smooth. Blend in eggs, one at a time.
  • Remove one cup of batter and spread into bottom of glass or crockery baking dish which has been sprayed very lightly with non-stick spray.
  • Add pumpkin and spices to remaining batter and stir until blended.
  • Carefully spread pumpkin layer over first layer.
  • Bake in preheated oven 35-45 minutes or until center is almost set.
  • Allow to cool, then chill several hours or overnight.
  • Serve with whipped cream if desired and wait for compliments.
  • I used a 10" by 8" glass baking dish to cook this. Next time I think I would double the recipe and only increase to a 9" by 13" baking dish to make a thicker cheese cake. This would show of the layers better. Some cinnamon dusted on the top would have been a nice touch.

1 1/2 lbs low-fat ricotta cheese
1 1/2 lbs 1% low fat cottage cheese
1/2 cup sugar substitute, plus 1 tbl
1/2 cup sugar
2 teaspoons cornstarch
1 lemon, juice of
2 teaspoons flour
5 eggs
3 teaspoons vanilla extract
1 1/2 cups fat free sour cream

Steps:

  • Preheat oven to 400.
  • Coat a 10" springform pan with cooking spray and line the sides with a double layer of 6"-wide (high) waxed paper.
  • In a large bowl, with an electric mixer on medium speed, blend the ricotta cheese, cottage cheese, 1/2 cup of the sugar substitute, and sugar until smooth. Beat in the cornstarch, lemon juice, flour, eggs, and 2 teaspoons of the vanilla extract. Pour the batter into the prepared pan.
  • Bake for 1 hour and 10 minutes, or until the top of the cake is brown.
  • Turn the oven off and allow the cake to remain in the oven for 1 hour longer.
  • In a medium bowl, combine the sour cream, the remaining 1 tablespoon sugar substitute, and the remaining 1 teaspoon vanilla extract. Spread over the cheesecake and return to the oven for 10 minutes, or until the topping is set. Refrigerate for 8 hours or overnight before slicing.
