1/2 cup chicken broth
1/4 cup tomato paste
1 teaspoon garlic powder

3 teaspoons chopped fresh thyme

2 cups cherry tomatoes
1/4 cup pitted kalamata olives
2 tablespoons capers, drained
3 cloves garlic, smashed
1/4 cup white balsamic vinegar or white wine vinegar
4 6-ounce tilapia fillets

  • Preheat the oven to 400 degrees F. Toss the potatoes with 1 tablespoon olive oil, 1 teaspoon thyme, 1/4 teaspoon salt, and pepper to taste in a bowl. 1 28-ounce can no-salt-added tomatoes, crushed by hand

1 1/2 pounds mussels, scrubbed and debearded
12 ounces tilapia, cut into 8 pieces
